My husband LOVED these and has been begging me to make more! They have a light lemon flavor that it isn’t too much much or overpowering. Just a simple, soft & chewy cookie that everyone will enjoy!
I don’t know about you, but I am a chocolate chip cookie kind of girl. They are easy to make and a classic dessert recipe. However, these are climbing the ladder of being a close second! I just can’t get over how light they are and SO SOFT! Mmmm!
Easy Lemon Cookies
Here’s What You Need:
1/2 Cup Cold Butter
1 Cup Sugar
1 Teaspoon Vanilla
1 Teaspoon Lemon Juice
1 Teaspoon Lemon Zest
1 1/2 Cup Flour
2/3 Teaspoon Baking Powder
1/8 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Powdered Sugar
1/4 Teaspoon Vanilla
Water (add enough for a thin icing consistency)
Cream Butter, Sugar, Vanilla, then slowly add eggs and lemon juice and zest.
Combine Flour, Baking Powder, & Salt in a bowl.
Slowly add into Butter Mixture and mix well.
Roll dough into balls and place on a parchment lined baking sheet.
Bake for 10-12 minutes at 350 degrees
Drizzle with Vanilla Icing Mixture.
This recipe will make about 18 cookies, you can always double the recipe for a crowd!
