There is nothing like a warm bowl of Potato Soup! This Easy Potato Soup Recipe is one that I like to pull out on cold winter days or snow days! It’s super easy to make and smells and tastes wonderful! You will be longing for a snow day snuggled up by the fire to enjoy this recipe! Plus, here are even more of my favorite Recipes!
This is a recipe that I have been working on with my mom to perfect. I really love the added flavor of the cream. Plus, there is just something about carrots and chicken broth that is comforting smell to me.
Potato Soup Recipe
Here’s What You Need:
1/2 cup chopped onions
1 cup carrots
6 medium potatoes chopped and peeled
3 cans chicken broth
1 cup cream
Sauté onions in olive oil.
Add Salt and Pepper to taste.

- 6 medium potatoes
- 3 cans chicken broth
- Cream cheese
- Sauté onions in olive oil.
- Add chicken broth and carrots to pot and let simmer.
- Add in chopped and pealed potatoes.
- Being to simmer and turn down to low heat.
- Cook for 30 minutes or until potatoes are cooked.
- Pour in cream and let it all come together and heat.
- Add Salt and Pepper to taste.
I am all about easy recipes that I can throw together in a hurry or that I can prepare ahead of time. This spring I plan on planting my own potatoes again, so I am also looking forward to trying this recipe with my homegrown potatoes!
