Easy Christmas Cupcakes

If you are looking for the perfect Christmas Cupcakes or Holiday Dessert, you will want to try these easy cupcakes!

Made from scratch, stuffed with a marshmallow, and the frosting is perfection! 

Hot Chocolate Cupcakes Recipe

Here’s What You Need:

*yields 22 cupcakes*

Cupcake Ingredients:
1 Chocolate Devil’s Food Cake Mix
1 Box (3.9oz) Chocolate Instant Pudding
4 Eggs
1 1/4 cup of water
1/2 cup of canola oil
1 12 oz bag of semi-sweet chocolate chips
1 Package of large marshmallows
Peppermint crunch sprinkles or holiday sprinkles
1/2 cup mini semi-sweet chocolate chips (for garnishing)
Holiday Straws

Frosting Ingredients:
3 cups powdered sugar
2/3 cups unsweetened cocoa powder
1/2 cup water
1 tablespoon pure vanilla extract

Directions:
Preheat the oven to 325 degrees and line a cupcake pan with cupcake liners.
In a large mixing bowl, combine the cake mix, instant pudding, eggs, water, and canola oil together with a stand or hand mixer.
Add in chocolate chips and mix well.
Using a 3 tablespoon cookie scoop or spoon, fill cupcake liners about 3/4 of the way full with the chocolate batter.
Bake for 30 minutes.
Remove the cupcakes from the oven and put a large marshmallow in the center of each cupcake and twist a little to push them into the cupcake.
Put the cupcakes back into the oven for 2 minutes to let the marshmallows melt.
Remove the cupcakes from the oven and press the marshmallow down (this will help the marshmallow melt on the inside of the cupcake and fill in the extra space around the cupcake).
Let cool for 10 minutes in the cupcake pan before transferring to a cooling rack.
While the cupcakes are cooling, make the frosting by combining the powdered sugar, unsweetened cocoa powder, water, and vanilla extract and mix until smooth.
Fill the marshmallow indention with mini chocolate chips and then cover the chocolate chips with frosting.
Cut large marshmallows in half and put half of a marshmallow on each cupcake and drizzle with frosting.
Garnish with Peppermint Crunch or Holiday Sprinkles.
Cut holiday straws in thirds and insert them into the cupcakes.
Let cupcakes cool completely and enjoy!

Can I use a regular chocolate cake mix instead of a chocolate devil’s food cake mix? 

You can, but you might not get the same flavor. I can’t see there being too much difference in the two cake mixes. 

How to Make Hot Chocolate Cupcakes

These are SUPER simple! Pretty much combine all of the ingredients for the cupcakes, bake them, and then make make the frosting! 

I used a 2 Tablespoon Cookie Scoop like this one to fill my cupcakes without a mess. It worked so well and was the perfect amount. 

The frosting is one of my favorite parts! It gets hard, but not too hard. Take one bite and it’s still creamy, yet sets so well! 

You will want to put the marshmallows in after 30 minutes and then bake them for another couple of minutes for the marshmallow to melt. 

Fill marshmallows with mini chocolate chips…

and then fill the hole  with frosting! 

Cut a large marshmallow in half and put it on top of the frosting. 

Drizzle with frosting and top with peppermint, or finish and decorate your cupcakes as you desire and insert holiday straws if you want to, or you can leave them as is! Garnish with Peppermint Crunch or Holiday Sprinkles and you’re done!
