How to make Lemon Blueberry Loaf Recipe
This recipe just shouts SUMMER! I love the combination of the lemon and blueberries! Here’s how to make Lemon Blueberry Loaf – it’s so easy because it’s made from a muffin mix!
First, mix together the blueberry muffin mix (save the blueberries for later), eggs, milk, and lemon juice. Drain, rinse, and dry the can of blueberries from the muffin mix and add them to the batter.
Next, line a loaf pan with parchment paper. Pour the blueberry batter into the pan.
Then, bake at 350 degrees for 40 minutes until the center is set and a toothpick comes out clean.
Now, mix together the lemon juice and powdered sugar to make the glaze. Add a little more lemon juice or water if needed, or more powdered sugar to get the perfect consistency.
Once the loaf is cooled, drizzle the lemon glaze on top and spread it out with a spoon!
Finally, let the glaze set for 10-15 minutes before serving. ENJOY!

Yields: 1 loaf of Lemon Blueberry Bread (about 8-10 slices depending on thickness)
Preparation time: 8 minutes
Baking time: 40 minutes
Additional time: 45 minutes
Bread Recipe:
1 Box of Blueberry Muffin Mix
1/2 cup whole milk
1/3 cup lemon juice
2 eggs (beaten)
Lemon zest (optional)
Lemon Glaze:
1/2 cup powdered sugar
2 teaspoons lemon juice
Directions:
Preheat the oven to 350 degrees.
In a medium size mixing bowl, with a fork, mix together 1 box of blueberry muffin mix (set the blueberries aside), milk, eggs, and lemon juice.
Drain, rinse, and dry the can of blueberries from the box of muffin mix and slowly add them to the batter.
Line a 1.6 qt. glass loaf pan with parchment paper and pour the batter into the prepared pan.
Bake for 40 minutes or until the center is set.
Let the bread cool in the pan for 30 minutes. After 30 minutes, lift the parchment paper from the pan and set on a cooling rack.
Make the glaze by combining the powdered sugar and lemon juice. Stir until smooth.
Drizzle glaze over the bread, garnish with lemon zest (optional), and let cool another 10-15 minutes.
Notes:
Pan dimensions: 5.9” x 10.7” x 2.4”
Bread can be kept on the counter for 1-2 days in an airtight container or bag.
