Old Fashioned Oatmeal Raisin Cookies

These cookies are hands down one of the best oatmeal cookies I’ve ever had. Soaking the raisins in water (see below) and using corn starch makes all the difference. 

How to make Soft and Chewy Oatmeal Raisin Cookies

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Over the stove, boil a little water in a pot and then pour the boiling water over 3/4 cups of raisins to help them get moisture back into them.

Add the eggs and vanilla and mix well.

Stir in the flour, corn starch, salt, baking powder, baking soda, and cinnamon.

Drain and dry the raisins and then fold in the oats and raisins into the batter.

Use a two tablespoon cookie scoop to create cookie dough balls and arrange them about 2″ apart on the baking sheet.

Bake for 11 minutes.

Remove from the oven and let cool on the baking sheet for at least 10 minutes.

INGREDIENTS:
1/2 cup unsalted butter
3/4 cup brown sugar
1/4 cup granulated sugar
1 egg
1 egg yolk
2 teaspoons pure vanilla extract
1 cup unbleached flour
1 tablespoon corn starch
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups instant oats
1 cup raisins, divided

DIRECTIONS:
Preheat the oven to 350 and line a baking sheet with parchment paper.
Heat water over the stove until boiling. Pour water over 3/4 cup of raisins and let them sit in the water until you add them to the batter.
Cream the butter, brown sugar, and granulated sugar together.
Stir in the egg, egg yolk, and vanilla.
Add the flour, corn starch, salt, baking powder, baking soda, and cinnamon to the wet ingredients.
Drain the raisins and pat them dry. Add the raisins and oats to the batter and mix until combined.
Use a two tablespoon cookie scoop to create cookie dough balls.
Arrange them about 2” apart on the baking sheet and bake for 11 minutes.
Remove from the oven and let cool on the baking sheet for at least 10 minutes.
Press the remaining raisins into the tops of the cookies and garnish with sea salt (optional).

Notes

Store cookies in an airtight container for up to 1 week at room temperature.

Option to not soak the raisins but your cookies may not stay as soft.

Should you soak your raisins before you bake with them?

Yes!! Soaking your raisins with hot water before you add them to the dough is so important to keep your cookies moist and chewy! 

Boil some water in a pot and then pour the water over the raisins and let them sit for 10 minutes (or while you put the rest of your cookie dough together. 

Drain the raisins and pat them dry before adding them to your cookie dough.

Why are my oatmeal raisin cookies so hard?

You could be stirring your dough too much, or you could have not added the corn starch.

I found that adding 1 tablespoon of corn starch to my recipe made such a difference for keeping them soft.

What kind of oats should you use in Oatmeal Raisin Cookies?

I like either quick oats or rolled oats. The quick oats have a smaller texture to your cookies but still yield a great result. 

Using rolled oats offers a little more of an oat texture.
