What you need to make Cadbury Creme Egg Chocolate Stuffed Cookies

  • Cadbury Creme Eggs
  • Cadbury Mini Eggs (a whole bag)
  • Mini Chocolate Chips
  • Cocoa Powder
  • Basic cookie ingredients (butter, sugars, flour, and more)

Big & Thick Creme Egg Stuffed Cookie Recipe

Yields: 8 cookies
Preparation time: 30 minutes
Baking time: 14 minutes
Additional time: 3 hours (2 in the freezer and 1 cooling)
 
Cookie Ingredients:
1/2 cup unsalted butter – softened
3/4 cup granulated white sugar
1/4 cup packed brown sugar
1 egg
1 teaspoon pure vanilla extract
1/3 cup unsweetened baking cocoa
1 cup unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup Cadbury Mini Eggs + extra to garnish
1 cup mini semi-sweet chocolate chips
8 Cadbury Creme Eggs + Extra to garnish

Frosting Ingredients & Garnishing:
1 1/3 cup powdered sugar
1/2 cup unsweetened baking cocoa
1/2 cup marshmallow creme
water
4 Cadbury Creme Eggs (cut in half)
Extra Cadbury Mini Eggs, crushed)

Directions:
In a large mixing bowl, cream the butter, sugar, and brown sugar together.
Stir in the cocoa powder, egg, and vanilla until combined. 
Slowly stir the flour, baking soda, and salt into your batter.
Fold in the chocolate chips and Cadbury Mini Eggs.
Now it’s time to create the cookie dough balls. I used about 5 tablespoons of dough or around 3.6 ounces. 
I used a two tablespoon cookie scoop for the bottom cookie dough ball, I topped it with a Cadbury Creme Egg, and then topped it with a 3 tablespoon cookie dough ball. 
The cookie dough balls weighed 5 ounces each before garnishing. 
Place the cookie dough balls on a baking sheet that has been lined with parchment paper and freeze the cookies for at least two hours. 
Pre-heat the oven to 400 degrees and line a baking sheet with parchment paper. Let your oven reach and remain at that temperature for at least 30 minutes.
When ready to bake, place the cookies at least 2″ apart on the baking sheet. 
Bake for 14 minutes. 
Remove from the oven and use a circle cookie cutter to create perfect cookies every time by swirling each cookie around in the cookie cutter.
Let cookies cool on the baking sheet for at least 1 hour. 
Make the frosting by combining the powdered sugar, cocoa powder, marshmallow creme, and water together. Mix until smooth. 
Spoon onto the cookie and add half of a Cadbury Creme Egg to the top. 
Garnish with crushed Cadbury Mini Eggs. Let cool for at least 1 hour or eat melty.

Notes:
If you don’t bake them immediately, transfer the cookie dough balls to a zippered bag or airtight container. 
If your cookies start to burn or get too hard, only bake for 12 minutes or drop your oven temperature to 375 degrees.
Always bake a “test” cookie to test the temperature and timing of your oven.
