This Easy Oatmeal Chocolate Chip Cookies Recipe is one of my favorite cookie recipes to make in between holidays or for a simple dinner party! It’s a staple in our home and one that my mom would make growing up!
I know the oats don’t add too much “different” to chocolate chip cookies, but they add enough that it’s a burst of flavor and something I crave every now and then.
If you are having friends over for a dinner party or hosting an event, these are a simple cookie you can whip up in no time.

Oatmeal Chocolate Chip Cookies Recipe
Here’s What You Need:
2 Sticks of Butter
½ Cup Sugar
½ Cup Brown Sugar
1 Egg
1 tsp. Vanilla
1 1/2 Cups of Flour
1 Cup Quick Cook Oats
½ tsp. Baking Soda
½ tsp. Salt
1 12 oz. Bag of Mini Chocolate Chips
DIRECTIONS:
Pre-heat oven to 350 degrees.
Combine melted butter, sugar, brown sugar, egg, and vanilla in a large mixing bowl.
Mix well.
Slowly add flour, oats, soda, and salt and mix well.
Fold in mini chocolate chips.
Roll into 1″ balls and place on a cookie sheet lined with parchment paper about 2″ apart.
Bake for 12-15 minutes at 350 degrees.
Mmm! SO Good and SO Easy! Plus, these are the perfect after school snack if you have kids!
I made these yesterday for some of my dance girls who are celebrating their birthday this month! They LOVED them!
If you are looking for a little “extra”, you can add pecans to the top before you bake them – or even cranberries or toffee! Maybe even some coconut!
Whatever you choose, to keep it basic or to add a little topping, you can’t go wrong with these easy Oatmeal Chocolate Chip Cookies!
