Apple Coffee Cake Recipe

Start by peeling and chopping your apples. Once this is done, toss them in cinnamon and sugar and set them aside. Mix your ingredients together and then layer your coffee cake according to the directions. Once the coffee cake is done, drizzle the glaze over the entire cake and serve!

Apple Coffee Cake Ingredients

Here’s What You Need:
3 medium apples
1/2 cup butter (softened)
2/3 cup sugar + 2 tablespoons sugar
2 eggs (room temperature)
1 1/2 teaspoons vanilla extract
1 1/2 cups un-bleached flour
1 3/4 teaspoon baking powder
1/2 cup milk
1/3 cup brown sugar
2 teaspoon ground cinnamon
1/2 cup pecans (chopped)
For glaze:
1/2 cup powdered sugar
1 tablespoon water

Directions:
Preheat oven to 350 degrees.
Spray a 9×13” baking dish with cooking spray or line with foil and spray with cooking spray.
Peel and chop apples into chunks and toss in 2 tablespoons sugar with 1 teaspoon cinnamon – set aside.
Mix brown sugar and 1 teaspoon cinnamon together in a bowl – set aside.
In a medium sized bowl, cream together 2/3 cup sugar and 1/2 cup butter.
Add flour and baking powder and mix well.
Add eggs one at a time (and beat well between each).
Stir in vanilla and milk until smooth.
Gently fold in chopped pecans.
Pour the batter into the baking dish.
Spread the apple mixture evenly over the cake batter and sprinkle the brown sugar and cinnamon mixture on top.
Lightly pat apples into the batter and swirl the brown sugar mixture through the apples using a knife.
Bake for about 40 minutes or until a toothpick can be inserted in the center of the cake and comes out clean.
Let the cake cool for 15 minutes.
Combine powdered sugar and water to create the glaze and then pour over your apple coffee cake.
Serve and enjoy.

I don’t know why you couldn’t freeze Apple Coffee Cake. Once the cake is cooled, wrap it in plastic wrap completely or store in an airtight container. After it’s wrapped in plastic, wrap it in foil. Completely thaw coffee cake before serving.

Coffee Cake only lasts for about 1-2 days. You can cover the coffee cake with foil or plastic wrap to prevent drying out. I like to store mine in an airtight container at normal room temperature.
