Soft Sugar Cookie Recipe

*yields 30 cookies*

Ingredients:
1 cup of unsalted butter, melted (2 sticks)
1 1/2 cups of granulated sugar
2 ounces of cream cheese
2 teaspoons pure vanilla extract
2 eggs
3 1/2 cups of unbleached flour
1 teaspoon baking powder
1/2 teaspoon table salt
1/4 teaspoon baking soda
1/2 cup holiday sprinkles or white granulated sugar

Directions:
Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
In a large mixing bowl or stand mixer, cream together butter, sugar, and cream cheese. Beat well for 2-3 minutes.
Add vanilla and beat in eggs one at a time.
Slowly mix in flour, baking powder, baking soda, and salt.
Create 1” balls and roll them in sugar or holiday sprinkles.
Place cookie dough balls on a baking sheet about 2” apart.
Sprinkle extra sugar or sprinkles on the top of the cookies before you bake them.
Bake for 8-9 minutes or until the edges start to brown (8 minutes was perfect for my oven).
Remove the cookies from the oven and let the cookies cool on a cookie sheet for 5 minute before moving to a cooling rack to cool completely.

Notes:
You can always use different holiday sprinkles or any sprinkles you would like instead of granulated sugar.
If the dough seems too soft to roll, put it in the refrigerator for 30 minutes before creating cookie balls.

No, sugar cookies are not hard to make. The hardest part of sugar cookies is making sure the cookies don’t overcook and burn. Pull them out of the oven as soon as the edges start to brown and let them finish baking on the cookie sheet. 

Easter Sugar Cookies

I made a fun variation of this sugar cookie recipe for Easter! 

Just roll the cookie dough balls in some pink or purple sprinkles (or any color of your choice) and bake according to the directions!

It gives the cookies a pop of color that make them perfect to give to friends and family or serve at Easter brunch! 

So easy and PERFECT for the Easter holiday! 

You could also roll these cookies in any color of holiday sprinkles to match a birthday party theme or holiday!
