Here’s what you’re going to need to make these Chocolate Cherry Thumbprint Cookies! 

  • Check your pantry for the basics like butter, sugar, brown sugar, vanilla, eggs, flour, cocoa powder, baking powder, and salt. 
  • A can of Cherry Pie Filling – YUM! Doesn’t this just scream Christmas?!
  • Chocolate chips and almond bark! If you don’t have almond bark, you can always use extra chocolate chips to make the drizzle!

How to make Chocolate Cherry Thumbprint Cookies

If you love chocolate, then you are going to LOVE these cookies! Here’s how to make Chocolate Cherry Thumbprint Cookies!

First, mix together the butter, sugar, and brown sugar. Then add in the eggs and vanilla.

Then, in a separate bowl, mix together the dry ingredients (flour, cocoa powder, baking powder, and salt.)

Next, stir the wet and dry ingredients together to make the cookie dough and fold in the chocolate chips into the cookie dough.

Now, use the cookie scoop to make the cookie dough balls and place them on a prepared baking sheet.

Next, using the end of a baking spoon or spatula, create a hole in each of the cookie dough balls.

Now, fill each hole with the cherry pie filling and top with a cherry. (Ta-da!) Then bake the cookies until they are set.

Next, while the cookies are cooling, melt the chocolate almond bark and drizzle the chocolate over the cookie for the finishing touch.

Cherry Chocolate Thumbprint Cookie Ingredients

Chocolate Cherry Thumbprint Cookies Recipe

*yields 34 cookies*

Ingredients:
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
2 teaspoons pure vanilla extract
2 1/2 cups unbleached flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semi-sweet mini chocolate chips
Cherry pie filling (about half a 21 ounce can)
6 ounces of chocolate almond bark

Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a large bowl, combine butter, granulated sugar, and brown sugar.
Beat in eggs one at a time then add the vanilla.
In a small bowl, combine unbleached flour, cocoa powder, baking powder, and salt.
Mix dry ingredients into the wet ingredients. Dough will be thick and crumbly. You may have to use your hands to get it to come together.
Fold in semi-sweet mini chocolate chips.
Using a 1 tablespoon cookie scoop, create cookie balls and place them 1” apart on the baking sheet.
Use the end of a large baking spoon or spatula to create a hole in the middle of each cookie.
Put some pie filling in each hole and then top with one cherry.
Bake for 10-11 minutes. Cookies will look set and will continue baking on the baking sheet (do not over bake).
Remove from the oven and let cool on the baking sheet.
While cooling, heat chocolate almond bark in a microwave safe bowl in 20-30 second increments until melted completely (stirring between each).
Drizzle chocolate over cherry thumbprint cookies and let cool completely.

Notes:
● Sprinkle cookies with white granulated sugar immediately after taking them out of the oven to create a glassy/sparkly effect (optional).
● You can add about 1/8 teaspoon of coconut oil to your almond bark to make it smooth for drizzling so it doesn’t harden as quickly (optional).
● You can transfer the almond bark to a zippered bag and cut the tip off the end for easy, mess-free drizzling.

Should you fill thumbprint cookies before or after baking?

I like to add the pie filling before baking so it has the flavor of baked pie, and then if needed, add a little more to to make the perfect pie filled center!

If you don’t add your filling before baking, you may need to re-indent your cookies since the center will rise.

How do I keep my thumbprint cookies from spreading?

I like to use softened butter (not melted) to help prevent my cookies from spreading. You could also use a silicone baking mat to help keep your cookies from spreading so the cookies stick to the mat.
