How to Make Chocolate Chip Cheesecake Cookie Bars
Now let’s talk about these Chocolate Chip Cheesecake Cookie Bars! First, you will start by making a batch of chocolate chip cookie dough. I use the same dough from my favorite Homemade Chocolate Chip Cookies!
Combine all of the simple ingredients and mix well. Add the chocolate chips last and fold them in. One of my secrets to the perfect chocolate chip cookies or cookie bar is using mini chocolate chips. I’m not sure why, but it makes them taste like you got them from a bakery!
Next whip up your cheesecake layer and set it aside.
Pull out about 1/3 of the cookie dough from the batch and save it for later to go on top of the cheesecake.
Pour your cookie dough batter into a 9×9 square baking dish that has been lined with parchment paper. Spread evenly and then add a layer of cheesecake. Take the cookie dough that you set aside and crumble it on top of the cheesecake.
Now you get to have a little fun and add some more goodies or you can just bake and go! I added a few peanut butter chips, a few more mini chocolate chips, and holiday M&Ms.
Chocolate Chip Cookie Bars Ingredients:
Ingredients for Chocolate Chip Cookie Bar:
2 Sticks of Butter (1 cup) – softened
2 Eggs
1 Teaspoon Vanilla
2 1/2 Cups Unbleached Flour
3/4 Cup Sugar
3/4 Cup Brown Sugar
1 Teaspoon Baking Soda
1 Teaspoon Salt
1 12oz Package of Chocolate Chips
1/2 Cup Peanut Butter Chips
1 Cup Holiday M&Ms
Ingredients for Cream Cheese Mixture:
8 oz cream cheese (softened)
1/2 cup sugar
1 egg (room temperature)
1/2 tsp vanilla extract
Chocolate Chip Cookie Bars Directions:
Directions:
Preheat Oven to 350 Degrees.
Mix all the “wet” ingredients for the cookie dough (butter, eggs, vanilla).
Add in all dry ingredients – (flour, sugar, brown sugar, baking soda, salt) If your dough is too wet you can add a little more flour.
Fold in Chocolate Chips.
Line a 9-inch square baking dish with parchment paper.
Press a little more than half of the cookie dough into the pan lined with parchment paper. Press down firmly to create an even base.
In a medium size mixing bowl, beat cream cheese well.
Mix in the sugar and beat until combined.
Add in the vanilla and egg and beat until smooth.
Pour the cheesecake mixture over the top of the cookie dough base.
Crumble the remaining cookie dough over the top.
Sprinkle on peanut butter chips, chocolate chips, and holiday M&Ms.
Bake for 30 to 35 minutes.
Remove from oven and let cool completely (this is the most important part).
Store in an airtight container in the refrigerator.

If you want to use a 9×13 pan so that you cookie bars aren’t as thick, that is fine too. Just adjust your baking time accordingly or watch them closely in the oven.
When it comes to letting your cookie bars cool, be sure to let it cool completely before you serve. This will give the center of your cookie bars enough time to finish cooking through and cooling down!
