Easy Gluten Free Cookies

If you have always wanted a go-to easy gluten free cookie recipe, this is it! Keep in mind this recipe has been tested and uses two different gluten free flours for the recipe!

Some flours say they can be a 1-1 ratio, but i like to mix them for the best results!

How to make the Best Gluten Free M&M Chocolate Chip Cookies!

I love this EASY Gluten Free M&M Chocolate Chip Cookies! The perfect cookie loaded with chocolate chips, chocolate chunks, and M&Ms!

To start, you want to preheat your oven to 300 degrees and line your baking sheet with parchment paper

After that, add your softened butter, brown sugar, and granulated sugar together in a large mixing bowl. I usually use a fork to mix them together!

Next, you want to add in the egg and pure vanilla extract. Make sure to mix them well!

Then measure out the gluten free flour, almond flour, baking soda, and salt to stir into the mixing bowl

It’s finally time for the chocolate!

Fold in 1/2 a cup of mini M&Ms, 1/2 a cup of mini chocolate chips, and 1/2 a cup of chocolate chunks.

After everything is mixed together, grab a one tablespoon cookie scoop to measure out the cookies.

Using the cookie scoop, make four cookie dough balls for each cookie.

I like to put 3 tablespoons of cookie dough on the bottom and add 1 tablespoon on top (this makes the cookies thicker in the center!).

Make sure you don’t roll the dough into a ball!

Once you have scooped the cookies, place 4-5 cookie dough balls on the prepared baking sheet with parchment paper.

I usually place them 3″ a part on the baking sheet

Time to bake! Place, the baking sheet with the cookies into the oven and bake for 12-14 minutes.

Finally, remove from the oven and let them cool completely on the baking sheet.

Once they are cooled, you can enjoy your cookies!

Gluten Free M&M Chocolate Chip Cookies Recipe

Yields: 11 Cookies
Preparation time: 20 minutes
Baking time: 12-14 minutes
Additional time: 30 minutes

Cookie Ingredients:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar or dark brown sugar
1 egg
1 teaspoon pure vanilla extract
1 1/2 cup gluten free flour (I used Bob’s Red Mill Gluten Free Flour)
1/2 cup almond flour
1 teaspoon baking soda
1 teaspoon kosher salt
1/2 cup of Mini M&Ms (holiday or regular)
1/2 cup mini chocolate chips
1/2 cup chocolate chunks

Directions:
Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
In a large mixing bowl, cream the butter, brown sugar, and granulated sugar together.
Add the egg and pure vanilla extract and mix well.
Stir in the gluten free flour, almond flour, baking soda, and salt together.
Fold in 1/2 cup of mini M&Ms, 1/2 cup mini chocolate chips, 1/2 cup chocolate chunks.
Use a one tablespoon cookie scoop and make four cookie dough balls for each cookie. I put 3 tablespoons of cookie dough on bottom and one tablespoon on top (I did not roll the dough into a ball).
Place 4-5 cookie dough balls on the prepared baking sheet and bake for 12-14 minutes.
Remove from the oven and let them cool completely on the baking sheet.

Notes:

  • Bake a single “test” cookie to check the oven temperature and time on your oven. If the cookies start to melt or don’t look done, bump your temperature to 325 degrees.
  • I like to stack the cookie dough balls to make them thicker in the center.
  • Garnish cookies with additional toppings as soon as they come out of the oven.
  • Use a circle cookie cutter to shape the cookies so they are all similar in shape and size.
  • Store the cookies at room temperature for up to 5 days.

My secret to a good gluten free cookie is using a mixture of almond flour and gluten free flour! Even if the gluten free flour is a 1-1 ratio I like to mix the flours for the best texture.
