What you need to make Nutella STUFFED Cookies
- Nutella (hazelnut spread)
- Cocoa Powder
- Basic cookie ingredients
- Mini Chocolate Chips
Gourmet Stuffed Nutella Cookie Recipe
Yields: 8 Cookies
Preparation Time: 2.5 hours
Baking time: 12 minutes
Additional time: 1 hour
Ingredients:
1/2 cup unsalted butter – softened
3/4 cup granulated white sugar
1/4 cup packed brown sugar
1 egg
1 teaspoon pure vanilla extract
1/3 cup unsweetened baking cocoa
1 cup unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chunks (divided)
1 cup mini semi-sweet chocolate chips
(divided)
1/3 cup powdered/confectioners sugar
1/3 cup hazelnut spread with cocoa (Nutella)
salt flakes for garnishing
Directions:
- Line a cookie sheet with parchment paper.
- In a medium sized mixing bowl, cream the butter, white sugar, and brown sugar together.
- Add egg and vanilla and mix well.
- Stir in the baking cocoa and mix well.
- Add the flour, baking soda, and salt and mix.
- Stir in 3/4 cup of chocolate chunks and ¾ cup mini chocolate chips (save the rest for garnishing). Stir until combined.
- Set the dough aside and make the filling by combining the Nutella and powdered sugar together. Option to add 1 teaspoon of vanilla to this mixture.
- Using a two tablespoon cookie scoop, create two cookie dough balls for each cookie.
- Place one cookie dough ball on the parchment paper and put a divot in the center to hold the filling.
- Fill with about 2-3 teaspoons of Nutella filling.
- Flatten and place the second cookie dough ball on top of the Nutella filling and enclose the filling by pressing the dough together around it.
- Do this for all of the cookies.
- Freeze the cookie dough balls for at least 2 hours before baking or place in an airtight container overnight.
- When it’s time to bake, pre-heat the oven to 350 degrees and let it sit for at least 30 minutes at that temperature before baking the cookies.
- Place the cookies on a baking sheet that has been lined with parchment paper making sure the cookies are at least 2.5 apart on the baking sheet so they have room to spread (Tip: only bake half of the cookies at a time – bake 1 cookie first to test).
- Bake for 12 minutes and remove from the oven. Let the cookies rest on the baking sheet until cooled completely.
- While the cookies cool, Melt the remaining chocolate chips in the microwave in 15 second increments. Once melted, drizzle over half of the cookie and garnish with chocolate chunks and salt flakes.
- Let the cookies cool until hard (it could take about an hour) or eat melty.
NOTES:
- As soon as the cookies come out of the oven, use a large circle cookie cutter to shape the cookies if desired.
- Cookies can be stored for up to 5 days in an airtight container at room temperature.
- Dough can be frozen for up to 2 months in an airtight container.
- Garnish with sea salt, salt flakes, or kosher salt for the best flavor.
Pro-tips for this Gourmet STUFFED Nutella Cookie Recipe
Always do a test cookie in your oven to test temperature and time. All ovens cook a little differently.
If your cookies are over-done, drop your cooking time by a minute or too.
If the cookies are melting in the oven, try raising your oven temperature to 375 degrees.
