I am so excited to share this Strawberry Lemon Bars Recipe with you! I mean, nothing goes together better than strawberries and lemons for summertime!
I am a HUGE fan of traditional Lemon Bars, so I had to add a strawberry twist to a summertime favorite!

How do you make strawberry lemon bars from scratch?
To make Strawberry Lemon Bars from Scratch, start by making the crust.
The crust is one of my favorite parts of these Strawberry Bars! All you need is a couple of simple ingredients (and the powdered sugar is a secret ingredient)!
You could always use a pastry cutter to get the crust to come together.
Press the crust into the pan that has been lined with parchment paper and bake until golden brown.
While your crust is baking, put together the strawberry lemon filling.
I used a blender to puree my strawberries, sugar, flour, and lemon juice.
You can always save a few of your strawberries and pulse them in for pieces. That is what I did this time, but next time I will probably puree all of the strawberries and not leave pieces.
Remove the mixture from the blender to add your eggs and lemon zest. Do not over mix.
Let the crust cool for a few minutes before you add the strawberry lemon mixture.
Bake for 18 minutes and then cover with foil to prevent browning and bake for another 15-18 minutes.
Once set, let Strawberry Lemon Bars cool completely before garnishing with powdered sugar and lemon zest.
Strawberry Lemon Bars Recipe
Here’s What You Need
Crust Ingredients:
2 Cups All Purpose Flour
2 Stick of Butter (soft)
1/2 Cup Powdered Sugar
1/2 Teaspoon Salt
Strawberry Lemon Filling Ingredients:
1 1/2 Cup Strawberries (fresh or frozen)
1/3 Cup Lemon Juice
2 Tablespoons Flour
1 Tablespoon Lemon Zest
2 Cups Sugar
4 Eggs
Powdered Sugar & Lemon Zest to Garnish (optional)
Directions:
Preheat Oven to 350º.
Line a 9×13” glass Baking Dish with Parchment Paper.
In a large bowl, mash butter into the flour, powder sugar, and salt with two forks.
Press mixture into your prepared pan to form a crust layer.
Bake crust for 22-24 minutes or until the edges are lightly brown.
While the crust is baking, in a blender, combine 1 Cup strawberries, lemon juice, flour, and sugar.
Transfer mixture to a bowl and slightly beat in eggs and add lemon zest.
Pour strawberry lemon mixture over baked crust (after it cools for 5 minutes).
Bake for 18 minutes.
Remove from the oven, cover with foil, and bake for another 15 minutes.
After the lemon bars are baked, let cool completely on a baking rack.
Dust with powdered sugar and lemon zest, cut, and serve!

Notes
*If your Strawberry Lemon Bars are runny after they are done baking, put them back in the oven for another 3-5 minutes until set.
Should I refrigerate strawberry lemon bars?
Yes, unless you are going to bake them and eat them the same day, or serve them at a party and leave them out for a few hours, you should refrigerate lemon bars or leftovers. Since lemon bars are basically a lemon custard, they are best stored in the refrigerator.
Why are my strawberry lemon bars runny?
Your strawberry lemon bars may be runny because they need a little more time to set in the oven. You know lemon bars are done when the center is set and not jiggly. The edges will turn slightly brown and center will be set. If your lemon bars are runny, go ahead and bake them longer in extra 2-3 minute increments until set.
