The Best Homemade Butterfinger Cookies

The Best Homemade Butterfinger Cookies! These will quickly become a family favorite in your house, just like they have mine! Or make them for a potluck or party and watch how fast they disappear!

How to make Butterfinger Cookies

First, line 2 baking sheets with parchment paper (or you can use a Silpat Baking Mat instead). And preheat your oven to 350 degrees.

Cream together 1/2 cup of softened Unsalted Butter and 1/2 cup of Creamy Peanut Butter. (I used the Member’s Mark Creamy Peanut Butter from Sam’s.)

Next, add in 3/4 cup of Brown Sugar and 1/4 cup of Granulated Sugar. Mix all together until combined.

Then mix in 1 Egg and 1 teaspoon of Vanilla Extract.

Time for the dry ingredients! Add in 1 1/2 cup of Unbleached Flour, 1/2 teaspoon of Salt, and 1/2 teaspoon of baking soda.

Mix it all together well.

Now mix in 1/2 cup of butterfinger pieces into the cookie dough.

Use a 2 tablespoon Cookie Scoop (HERE is the one I use) to make the cookie dough balls.

Space the cookie dough balls about 2″ apart on the Baking Sheets and bake in the oven for 9 minutes.

Once they are done baking, take them out of the oven and sprinkle on the remaining butterfinger pieces.

Finally, let the cookies cool on the hot Baking Sheets for at least another 10 minutes. Then move them to a Cooling Rack to finish cooling before serve. ENOY!

Butterfinger Cookies

Yields: 20 Cookies
Preparation time: 10 minutes
Baking time: 9 minutes
Additional time: 10 minutes

Ingredients:
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
3/4 cup brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1 1/2 cup unbleached flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup butterfinger pieces, divided

Directions:
Preheat the oven to 350 degrees and line a couple of baking sheets with parchment paper.
In a mixing bowl, mix the butter and peanut butter together until smooth.
Add the brown sugar and granulated sugar and cream until combined.
Stir in the egg and vanilla and mix well.
Add the flour, salt, and baking soda and mix until soft dough forms.
Stir in 1/2 cup of butterfinger pieces and mix well.
Use a two tablespoon cookie scoop to create cookie dough balls.
Put them about 2” apart on the baking sheet and bake for 9 minutes.
Remove from the oven and shape the cookies with a cookie cutter.
Top the cookies with remaining butterfinger pieces and let cool for at least 10 minutes on the baking sheet before transferring to a cooling rack.

Notes:
● If you don’t want to garnish your cookies with butterfinger you can always add all of it at the same time into your cookie dough.
● Cookies can be stored at room temperature for up to 1 week in an airtight container.
● Can use crunchy or smooth peanut butter for this recipe (I used the natural Member’s Mark peanut butter from Sam’s).

How do I make my Butterfinger Cookies chewy instead of crunchy?

Don’t over bake the cookies!

I bake my cookies at 350 degrees for 9 minutes. Then I let them cool on the hot Baking Sheets for an additional 10 minutes. This keeps the center of the cookies soft and chewy! (Just the way I like it!)
