Here’s what you need to make Caramel Cookies!
- Caramel Squares – stuff the cookies with caramel squares and use these to make the caramel glaze.
- Caramel Bits – Add a few caramel pieces to the cookies and then use the rest to make the glaze – YUM!
- Sea salt – flakes of sea salt add a burst of flavor that just screams Fall!
How to make Caramel Cookies
These Caramel Cookies are SO yummy! They are perfect for the Fall season!
First, add softened butter and brown sugar to a bowl and cream them together.
Second, mix in the egg and vanilla.
Now, add in the dry ingredients (flour, baking powder, baking soda, and salt) and stir until combined.
Then, mix in the caramel pieces. (But save some for decorating at the end!)
Use a cookie scoop to make the cookie dough balls. Place a caramel square in the middle of each cookie and wrap the dough around the caramel. Now it’s time to BAKE!
Once the cookies are done baking, set them out to cool. Meanwhile, melt the caramel for the sauce.
Finally, drizzle the caramel sauce over the cookie and sprinkle sea salt on top for the finishing touch!
Caramel Cookies Recipe
Yields: 16 cookies
Preparation time: 12 minutes
Bake time: 10 minutes
Additional time: 7 minutes
Ingredients:
1/2 cup unsalted butter, 1 stick (softened)
1 cup packed light brown sugar
1 egg
1 teaspoon pure vanilla extract
1 1/2 cups unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon sea salt + extra for garnishing
1 cup caramel pieces (divided)
About 20-24 caramel squares (one for each cookie & for sauce)
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
If your butter isn’t soft or room temperature, heat it in the microwave for about 20 seconds in a microwave safe bowl.
Cream together butter and brown sugar.
Add the egg and vanilla and mix until combined.
Slowly stir in the dry ingredients (flour, baking powder, baking soda, and 1/4 teaspoon sea salt).
Fold in about 1/2 cup caramel pieces into the dough (save the rest for the drizzle).
Once a soft dough forms, create cookie dough balls about 2 tablespoons using a cookie scoop or spoon.
Place a caramel square inside each cookie dough ball and form the dough around the caramel.
Be sure cookies are about 2” apart on the baking sheet and bake for 11-12 minutes (cookies are done when the edges start to brown).
Let the cookies cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
While the cookies cool, make the caramel sauce.
To make half of the caramel sauce, combine 1/4 cup caramel pieces, 2 caramel squares, and 1 teaspoons water together in a microwave safe bowl (repeat for the second batch of cookies).
Melt in the microwave for 30 seconds (if needed, microwave in 5-10 second increments until smooth).
Drizzle cookies (or half of the cookie) with caramel sauce and sprinkle with sea salt.
Serve warm or let cool completely.
Notes:
I like to make half of the caramel sauce at a time for each batch of cookies so it doesn’t harden.

Making the Caramel Sauce
I like to make half of the caramel sauce at a time (half for each batch of cookies), but you could make all of the cookies and then make your caramel drizzle at the same time.
By adding water and the two types of caramel together it keeps the caramel drizzle from getting too hard and crunchy.
I think Caramel Cookies are quickly becoming one of my favorite types of cookies. I don’t know if it’s the brown sugar, the gooey caramel, or the sea salt, but the flavor is absolutely amazing!
