I am OBSESSED with these cookies! SO easy to make and also an easy freezer cookie recipe that you can keep on hand and bake one or two at a time when you get that craving for a warm chocolate chunk cookie!
Cowboy Cookies Recipe
*yields 13 large cookies*
INGREDIENTS:
1 stick of unsalted butter (melted)
1/2 cup white granulated sugar
1/2 cup light brown sugar
1 egg
1/2 teaspoon pure vanilla extract
1 1/4 cup unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon table salt
1/8 teaspoon cinnamon
1 1/4 cup chocolate chunks + extra for garnishing (optional)
1 cup unsweetened coconut
1/3 cup chopped pecans
1/4 cup rolled oats
DIRECTIONS:
Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
Melt butter in 20 second increments in the microwave in a microwave safe bowl.
Combine melted butter, white sugar and brown sugar together in a mixing bowl and mix well until smooth to remove all of the clumps.
Add the egg and vanilla and mix well.
Stir in flour, baking soda, salt, and cinnamon.
Fold in chocolate chunks, coconut, and oats.
Using a 3 tablespoon cookie scoop, create cookie dough balls and place them 2” apart on the prepared cookie sheet.
Bake for 18-20 minutes or until the edges start to brown and the center is soft.
Remove from the oven and add a few extra chocolate chunks on top of each cookie (optional).
Let the cookies cool on the cookie sheet for 20-30 minutes for the center and chocolate to set or serve warm and gooey.

Notes
You can always substitute chocolate chips for the chocolate chunks.
Garnish cookies with chocolate chunks on top after they come out of the oven.
Can I freeze the cookie dough?
YES!! Absolutely! These are the perfect cookies to put in the freezer and bake one or two at a time. Just scoop them up according to the directions and put them in a freezer safe container or freezer bag on parchment paper.
How do you bake frozen cookies?
If you have frozen cowboy cookies, preheat your oven and remove the cookies from the freezer. Place on a baking sheet lined with parchment paper and bake according to the directions. There is no need to thaw the cookie dough before baking.
How to make Cowboy Cookies
Making cowboy cookies is so easy! First, mix all of your wet ingredients, and then stir in all of the dry ingredients!
The most important part about cowboy cookies is making them large! Use a 3 tablespoon cookie scoop and put your cookies 2″ apart on a prepared baking sheet so that they can spread.
Bake low and slow! You want to preheat your oven to 300 and bake them for around 18-20 minutes. Longer than most cookies since you are cooking them at a lower temperature. The center will still be gooey when you pull them out of the oven.
