How to Make Peanut Butter No Bake Cookies

First you need to gather all of your ingredients! I like to get them all our at one time and measure everything before I start to bake. That way once I get started, the process goes super fast!

Combine your butter, milk, sugar, brown sugar, salt and cocoa powder in a sauce pan. Melt ingredients on low heat and stir continuously. 

**Don’t miss the secret ingredient in these! The brown sugar!! You can make these cookies with just white sugar, but if you mix white and brown sugar they taste SO GOOD!

Once the butter is melted you can increase your heat to medium until the mixture starts to boil. Tip: Be patient and bring your mixture to a boil on medium heat, do not try to raise the heat to speed up the process. Once the mixture starts to boil, let it boil for 1.5 minutes. 

After 1.5 minutes of boiling, remove the mixture from the heat and add in peanut butter and vanilla. Mix well until the peanut butter is completely melted. 

Add in the oats and coconut. Continue stirring so that it all gets mixed completely together. 

I like to use a cookie scoop for the next part so that the cookies get to be about the same size. Scoop mixture onto a pan that has been lined with parchment paper to prevent from sticking. 

Once all of your cookies are made, sprinkle coconut flakes on the top to garnish your cookies and then drizzle with caramel!

For my caramel I used the caramel baking squares. I used about 8-15 squares and heated these in the microwave for 30 second increments on power level 5 until they were melted. Watch your caramel closely because it doesn’t take long to melt. 

Once you are finished with the caramel, let your cookies cool completely!

1/2 Cup Unsalted Butter (Cut into Pieces)
1/2 Cup Whole Milk
3/4 Cup Brown Sugar (Packed)
3/4 Cup White Sugar
1/4 Cup Unsweetened Cocoa Powder
3/4 Cup Peanut Butter
1 1/2 Teaspoon Vanilla Extract
1/4 Teaspoon Salt
3 Cup Quick Oats
1/3 cup coconut & some to garnish (optional)
8-12 Pieces of Caramel (optional)

Directions:
Combine butter, milk, brown sugar, white sugar, salt, and cocoa powder in a saucepan.
Stir over low heat until butter is completely melted.
Once butter is melted, increase heat to medium and continue stirring until mixture begins to boil.
Boil mixture for 1.5 minutes.
Remove from heat and add in peanut butter and vanilla.
Mix well.
Add oats and coconut and stir until combined completely.
Using a cookie scoop or spoon, dip 1 tablespoon of batter onto a cookie sheet that has been lined with parchment paper.
Sprinkle with coconut flakes.
Melt caramels in a small bowl in the microwave for 30 seconds on power level 5. Continue this process until caramel melts completely.
Drizzle caramel over cookies and let cool completely.

Why do my no bake cookies turn out gooey?

If your no bake cookies are turning out gooey, you are probably boiling your mixture too long. Only boil the mixture for 1 to 1.5 minutes. If you boil your mixture too long, it will overcook the sugar and your cookies will not set.
