How to make S’mores Cookies
If you’re looking to make S’mores cookies, one of my tips is don’t put the marshmallows in the batter.
Add the marshmallows on top of the cookie dough balls or put them on the cookies after they bake (or both) 🙂
What happens when you put the marshmallows in the batter, when they melt in the oven they will get super hard and sticky and make your cookies run.
Also, try sprinkling the graham cracker on top instead of adding it to the batter. Otherwise the graham crackers will get soggy.
Chocolate S’mores Cookie Recipe
Ingredients:
1/2 cup unsalted butter – softened
3/4 cup granulated white sugar
1/4 cup packed brown sugar
1 egg
1 teaspoon pure vanilla extract
1 cup unbleached flour
1/3 cup unsweetened baking cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chunks
1 cup mini marshmallows
2-3 Hershey bars
1/4 cup graham cracker crumbs (for garnishing)
Directions:
Preheat oven to 350 degrees.
Cream butter, white sugar, and brown sugar together in a medium sized mixing bowl.
Add egg and vanilla and mix well.
In a small mixing bowl, whisk together flour, baking cocoa, baking soda, and salt and then add the dry mixture to the wet mixture.
Fold in chocolate chunks.
Using a cookie scoop, create 2 tablespoon cookie dough balls and place them about 2” apart on a baking sheet that has been lined with parchment paper.
Press 3 marshmallows into the center of each cookie dough ball and bake for 9-10 minutes.
Remove from the oven and use a mason jar lid or cookie cutter to help shape the cookies.
Add 3-6 more marshmallows and use them to spread the melted marshmallows around the top of the cookie.
Place a piece of chocolate on top of the marshmallows and sprinkle with crushed graham crackers.

A fun trick to make all of your cookies the same size is to use a mason jar lid or cookie cutter to re-shape the cookies immediately after they come out of the oven!
Put the mason jar lid around the cookie and move it around in a circle quickly to re-shape the cookie into a perfect circle!
How do you keep marshmallows from melting in cookies?
To keep the marshmallows from melting in your cookies, don’t add the marshmallows to your cookie batter. You can add 2-4 on top of the cookie before baking, but then add the rest after they bake.
Can S’mores Chocolate Cookies be frozen?
Chocolate S’mores Cookies can be frozen! I’d freeze the batter without the marshmallows and toppings. Just the chocolate cookie base – then add the rest when you’re ready to bake!
