The BEST Chewy Cranberry Cookies! Here’s my favorite baking tip for getting perfectly soft and chewy.
DON’T OVER BAKE YOUR OCOKIES! Only baked your cookies for 8-9 minutes – just until the edges have begun to slightly brown.
Take them out of the oven and let the cookies cool on the hot baking sheet for at least 10 minutes. (This allows the center to continue “cooking”, but keeps it soft and moist).

You can even freeze the cookie dough balls for later and then pull out however many you need to bake when you’re ready! I love doing this to be prepared for when we have friends or family over!

Cranberry Chocolate Chip Cookies with Pecans! I love the addition of Pecans and Cranberries in these cookies – it brings an added texture and flavor to the cookies!
Cranberries not your favorite? You can totally switch them out for another dried fruit for type of chocolate. Let me know what your favorite combination is in the comments!
How to make Cranberry Chocolate Chip Cookies Recipe
First, start by lining a Baking Sheet with Parchment Paper and preheating your oven to 350 degrees.
(Instead of parchment paper you could also use a Silpat Baking Mat.)
Then add your softened butter to a Mixing Bowl.
Measure in the granulated sugar and the brown sugar, then cream that together with the butter.
Next, mix in the egg and vanilla.
Then you are going to measure in the dry ingredients (flour, baking soda, and salt) and combine all the ingredients.
Time for the add-ins! Mix in the cranberries, pecans, and chocolate chips. (Do this gently – don’t over mix)
Then, using Cookie Scoop (I like a 2 tablespoon scoop), make the cookie dough balls.
Place the cookie dough balls on the prepared Baking Sheet and bake in the oven for about 8-9 minutes,
Once the cookies have just begun to brown on the edges, take them out of the oven. Be sure to let them cool on the baking sheet for about 10 minutes.
(If you want to, add a few more pecans and cranberries on the tops as soon as the cookies come out of the oven.)
Finally, transfer the cookies to a Cooling Rack to finish cooling. then serve and ENJOY!

Preparation time: 10 minutes
Baking time: 9 minutes
Additional time: 10 minutes

Directions:

In a medium sized mixing bowl, cream together the butter, granulated sugar, and brown sugar.
Add the egg and vanilla and mix well.
Stir in the flour, baking soda, and salt.
Fold in the cranberries, mini chocolate chips, and chopped pecans.
Use a 2 tablespoon cookie scoop to create cookie dough balls.
Place them on the prepared baking sheet about 2” apart.
Bake for 8-9 minutes – remove from the oven as soon as the edges start to brown.
Optional: garnish the tops of the cookies as soon as they are removed from the oven with cranberries, chocolate chips, and pecans.
Let cool on the baking sheet for at least 10 minutes before transferring to a cooling rack.
