- You’ll need Butter, Sugar, Brown Sugar, an egg, and vanilla
- Dry ingredients will include Flour, Baking Soda, and Salt
- Quick Oats, Dried Cranberries, and White Chocolate Chips (YUM!)
- You’ll also need Parchment Paper, a Baking Sheet, and a Cookie Scoop (I used a 2 tablespoon scoop)

Oatmeal Cranberry Cookies with White Chocolate Chips may be one of my favorite Holiday flavor combinations! I love the flavor of Cranberries with White Chocolate Chips – it tastes like Christmas!
Chewy Oatmeal Cranberry Cookies
To get deliciously Chewy Oatmeal Cranberry Cookies, bake your cookies for 8-9 minutes at 350 degrees. The center of the cookies will stay soft and chewy, while the edges will be slightly brown. The perfect Holiday cookie!
How to make this Easy White Chocolate Chip Cranberry Oatmeal Cookies Recipe
First, start by preparing your baking sheet with parchment paper and preheating your oven to 350 degrees.
Then add the softened butter, sugar, and brown sugar to a bowl and cream together.
Next, mix in the vanilla and egg until well combined.
Now add in the flour, baking soda, and salt.
Now mix in the oats and most of the cranberries and white chocolate chips.
(The remaining cranberries and white chocolate chips are for the end!)
Now create the cookie dough balls. Use a cookie scoop (I used a 2 tablespoon cookie scoop) and scoop the cookie dough balls onto the baking sheet.
Place the cookie dough balls about 2″ apart on the baking sheet and then bake!
Bake the cookies for about 8-9 minutes. (The edges of the cookies will be slightly brown.)
Finally, top the cookies with the remaining cranberries and white chocolate chips.
Let the cookies cool for about 5 minutes on the baking sheet before transferring them to a cooling rack. Serve and ENJOY!

1/2 cup light brown sugar
1 egg
1 teaspoon vanilla
1 1/4 cup unbleached flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup quick oats
1 cup dried sweetened cranberries, divided
1 cup white chocolate chips, divided
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Cream together the butter, sugar, and brown sugar.
Add the vanilla and egg. Mix until combined.
Stir in the flour, baking soda, and salt.
Fold in the oats, cranberries, and white chocolate chips.
Use a 2 tablespoon cookie scoop to create cookie dough balls. Place the cookie dough balls about 2” apart on the baking sheet.
Bake for 8-9 minutes (or until the edges start to brown).
Remove from the oven and top with extra white chocolate chips (optional).
Let cool for 5 minutes on the baking sheet before transferring to a cooling rack.
Notes:
Cookie dough balls can be frozen for up to 3 months in an airtight container.
Cookies will last 4-5 days at room temperature in an airtight container.

Why are my Oatmeal Cranberry Cookies hard?
They were probably over baked. Only bake your cookies for 8-9 minutes at 350 degrees.
When you take them out, the center will still look a little under baked while the edges will have just started to brown.
Allowing the cookies to cool on the hot baking sheet for several minutes continues the baking process while keeping them soft and chewy!
