My kids LOVE the Mother’s Circus Animal Cookies – so these fun Circus Animal Cookies were a HIT with them!

They’re packed with same yummy flavor and then coated with smooth and creamy Almond Bark. YUM!

Circus Animal Cookie Balls

You’ll be surprised how EASY Circus Animal Cookie Balls are to make! Once the cookie dough is formed, I just used a cookie scoop (I used a 1 tablespoon scoop) to make each truffle.

You’ll also need to put the truffles in the refrigerator for about 30 minutes before you dip them in Almond Bark. (You can even leave them in the refrigerator, or freezer, overnight if needed before you dip them!)

How to make Easy Circus Animal Cookie Truffles

First, crush the Circus Animal Cookies (9 ounce bag) into crumbs using a food processor. (Keep about 3 cookies for garnishing at the end.)

Next, add 6 ounces of cream cheese to the processor and mix until it turns into a sticky dough ball.

Now, use the cookie scoop to create cookie dough balls (or truffles) and space them out on a baking sheet that is lined with parchment paper.

Once you have made all the truffle balls, place them in the refrigerator for 30 minutes.

Once the truffle balls are chilled, melt 16 ounces of white almond bark in a melting pot. (Here is a great video on how to use a melting pot!)

You can also melt the Almond Bark in the microwave in 30 second increments until smooth.

Now you’re going to dip each truffle ball into the melted Almond Bark to coat them completely.

Then place the chocolate coated truffle balls back on the parchment paper.

Using the remaining 2 ounces of Almond Bark, you’re going to melt that (in the microwave again) and then add 6-8 drops of pink food coloring. Mix until combined.

Finally, drizzle the melted pink chocolate over each truffle ball. Then crush the remaining Circus Animal Cookies and sprinkle them on top! 

Serve once all the chocolate has set and ENJOY!

Easy Circus Animal Cookie Truffles

Yields: 19 Cookie Balls
Preparation time: 45 minutes
Baking time: 0
Additional time: 10-15 minutes

Ingredients:
1 9 ounce Bag of Iced Circus Animal Cookies
6 ounces Cream Cheese
18 oz White Chocolate Almond Bark
Pink food coloring (optional)

Directions:
In a food processor crush all but a few of the Iced Circus Animal Crackers until they are crumbs (save about 3 for garnishing).
Add the cream cheese and mix until combined and a soft sticky dough forms.
Use a one tablespoon cookie scoop to create cookie dough balls or truffles and place them on a baking sheet lined with parchment paper so you can easily move them around.
Place the truffles in the refrigerator for at least 30 minutes.
After the truffles are chilled, use a melting pot or microwave and melt 16 ounces of the white almond bark in 30 second increments until melted and smooth. Leave the truffles in the refrigerator until the chocolate is melted and ready.
Dip each truffle into the white chocolate to coat completely and then place back on the parchment paper to harden.
Once all of the truffles are dipped, melt the remaining 2 ounces of almond bark and add 6-8 drops of pink food coloring.
Drizzle pink chocolate over the truffles and top with crushed Circus Animal Crackers.

● I love using a melting pot when melting my chocolate because it makes it so easy, but you can always melt in the microwave in a microwave safe bowl.

How do you make Circus Animal Cookies?

Start by crushing up the Animal Cookies in a food processor, add Cream Cheese, and then mix all together until a sticky, dough ball forms. Then scoop into cookie dough balls and refrigerate for 30 minutes.

Melt Almond Bark in a melting pot (or microwave) and dip each truffle ball completely in the chocolate.

How do I melt the White Almond Bark?

I love using my melting pot! It’s super easy to use (see this video for easy “how-to” steps on using a melting pot.)

You can also use a microwave safe bowl and melt the Almond Bark in the microwave for 30 second increments.
