- Peanut Butter Chips, Semi-sweet chocolate chips

Peanut Butter Brownie Mix Cookies
For these cookies you will want to use a box of Dark Chocolate Brownie Mix! It makes them even more rich and the perfect colors for amazing peanut butter chocolate cookies!
How to make Peanut Butter Brownie Cookies
First, you will want to get everything ready by preheating the oven to 350 and line a baking sheet with parchment paper.
Start by making the peanut butter filling – combine the butter and peanut butter together.
Stir in the powdered sugar until mixed well and smooth. Store the filling in the refrigerator until it’s time to use.
In a medium sized mixing bowl, combine the brownie mix, eggs, butter, chocolate syrup, and vanilla together.
Stir in the flour and mix swell.
Use a two tablespoon cookie dough scoop and create 12 cookie dough balls.
Place them about 3″ apart on a baking sheet so the cookies have room to spread.
Use the end of a spatula or your finger to create a divot in each cookie. Fill the divot with the peanut butter filling.
Create 12 1 tablespoon cookie dough balls. Flatten the cookie dough out some and place one on top of the peanut butter filling on each cookie.
Press the sides together to hide the peanut butter filling inside.
Bake for 11 minutes and remove from the oven and let the cookies cool while you make the topping.
Heat the semi-sweet chocolate chips in a microwave safe bowl in the microwave in 20 second increments until melted and smooth.
Add the peanut butter chips and the coconut oil together and heat in a microwave safe bowl in the microwave in 20 second increments until melted and smooth.
Spoon about a teaspoon of each topping onto each cookie.
Use a spoon to swirl and smooth the topping on each cookie.
Let the cookies cool completely and enjoy!

Peanut Butter Filling Ingredients
3/4 cup peanut butter, smooth
1 tablespoon unsalted butter, softened
1/2 cup powdered sugar
Cookie Ingredients:
1 box of dark chocolate brownie mix (I used Betty Crocker 19.9 ounce box)
2 eggs
1/4 cup unsalted butter, melted
1 tablespoon chocolate syrup
1 teaspoon pure vanilla extract
1/4 cup all purpose flour
Topping:
1/2 cup semi sweet mini chocolate chips
1/2 cup peanut butter chips
1 teaspoon coconut oil
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
First, mix together the peanut butter mixture in a small mixing bowl.
Combine the softened butter and peanut butter together. Add the powdered sugar and mix well. Once the peanut butter filling is combined, put it in the refrigerator until needed.
For the cookies, combine the brownie mix, eggs, melted butter, chocolate syrup, and vanilla together.
Stir in the flour until mixed well.
Use a two tablespoon cookie scoop to create 12 cookie dough balls.
Using the end of a spatula or your finger, create a divot for the peanut butter filling.

Use a one tablespoon cookie scoop to create another cookie dough ball. Spread the cookie dough ball out and place it on top of your peanut butter filling and press the edges together to enclose the peanut butter filling.
Place cookies about 2-3” apart on your baking sheet and bake for 11 minutes.
Remove from the oven and let cool completely on the baking sheets.
Once cool, make the frosting by microwaving the semi-sweet chocolate in a microwave safe bowl in 20 second increments until melted – stirring between.
Combine the peanut butter chips and coconut oil together in a microwave safe bowl and heat in the microwave in 20 second increments until melted and smooth – stirring between.
Spoon about 1 teaspoon of peanut butter topping and chocolate topping on top of each cookie.
Use a spoon to swirl and cover the top of the cookie.
Let cool completely.
Notes:
- Cookies can be kept at room temperature for up to 5 days.
- If you want to freeze the cookies, freeze the brownie cookie dough balls with the peanut butter inside. Wait to frost the cookies until after baking.
