Easy Potato Soup Recipe
Here’s What You Need:
Ingredients:
1/2 cup chopped onions
1 cup copped carrots
4 large baking potatoes (peeled and chopped)
3 cans chicken broth
1 cup heavy cream
Salt & Pepper to taste
Directions:
In a medium sized stock pot, sauté onions in 2 teaspoons of olive oil.
Add chicken broth and carrots to pot and bring to a simmer.
Add in chopped and pealed potatoes if the broth does not cover the potatoes fully, add some water.
Being to simmer and turn down to low heat.
Cook for 40 minutes or until potatoes are cooked and soft.
Use a potato masher and mash some of the potatoes. I like to leave some whole and chunky.
Pour in heavy cream and let it all come together and heat through.
Add Salt and Pepper to taste.
Garnish with cheese, chives, sour cream, bacon, or any toppings that you desire!

How do you make potato soup from scratch?
It’s a lot easier than you think to make potato soup from scratch – especially if you have some extra potatoes laying around. Grab some chicken broth, cream, carrots, and onions and you are good to go!
First you want to chop your onions and carrots, and peel and chop your potatoes. Sauté the onions in a little bit of olive oil and then add the chicken broth and carrots. Bring to a simmer.
Add in your chopped potatoes and bring to a simmer and let cook for about 40 minutes or until the potatoes are soft.
Once the potatoes are soft, use a potato masher and mash up some of the potatoes (not all of them, unless you don’t want any chunks in your soup).
Pour in the heavy cream and let the soup come together and heat through. Finally, salt and pepper your soup to taste!
How can I add flavor to potato soup?
Cheese, pepper, and salt! Don’t forget to add salt and pepper to taste. I like to do this at the end so I don’t get too much. Cheese is another way – OH and BACON! You can add the cheese and bacon directly to the pot or you can garnish on top!
