If you are looking for a fun, and simple Christmas Cookie to make with your kids, try these Funfetti Christmas Roll Sugar Cookies! You can even use a package of sugar cookie mix to make them easier! 

Funfetti Christmas Sugar Cookies

Here’s What You need:

Ingredients:
1 Package of Sugar Cookie Mix
1 Stick of Butter
1 Egg
Holiday Sprinkles

Directions:
Preheat the oven to 350 degrees.
Make cookie dough according to package (this one needed 1 egg and 1 stick of butter).
Lay out a flat sheet of parchment paper.
Sprinkle some flour on the parchment paper to keep the dough from sticking and press dough out onto parchment paper to create a rectangle.
In squares, alternate colored sprinkles on the cookie dough (or get creative and make your own design)
Roll dough up (like a cinnamon roll) and cover with sprinkles as you roll.
Once the dough is rolled up, coat the outside with more holiday sprinkles.
Cut into slices about ¼” thick and place 2” apart on a cookie sheet that has been lined with parchment paper.
Bake for 9-10 minutes.
Remove from the oven and let cool on the cookie sheet for 5 minutes before moving to a cookie rack to cool completely.

How think should sugar cookies be?

There is really no right or wrong to this question, but sugar cookies should be about 1/4″ thick. That way they aren’t too thin and break apart but not too thick where they brown on the edges when baking.

The best way to keep your cookies from spreading is to use a silicone baking sheet or parchment paper instead of cooking spray. The oil in cooking spray will cause your cookies to spread.
