What you need to make Sugar Cookie Bites!

  • Basic cookie ingredients. There is nothing too complicated about these cookies. 
  • A square cookie cutter. I found it easier to make square cookies and then cut them into fourths so that the cookies were the same size.
  • Cute gift bags or boxes to package cookies for Christmas. If you aren’t giving them as a gift, serve them in a bowl instead of on a platter!

How to make Mini Christmas Sugar Cookie Bites

These cookies may be tiny, but they are LOTS of fun! Here’s how to make Mini Christmas Sugar Cookie Bites!

Chilled dough and a square cookie cutter

First, cream together the butter and cream cheese. Mix in the sugar, salt, egg and vanilla. Slowly add in the flour and baking powder and stir until the dough is formed. Wrap the dough up and chill for about an hour.

Next, sprinkle your surface with flour and roll the dough out. Using a square cookie cutter, cut the cookies out.

Now, take a knife or a pizza cutter to cut the squares in half and then half again to make 4 mini squares.

Then, transfer the mini cookies to a prepared baking sheet. It’s time for the SPRINKLES!

Decorate the cookies with the holiday sprinkles. (How festive!)

Finally, bake the cookies until the bottoms begin to brown. Once they have cooled, they will be ready to eat!

Sugar Cutout Cookies Ingredients

Mini Christmas Sugar Cookie Bites Recipe

Ingredients:
1 cup unsalted butter (softened)
8 ounces cream cheese (softened)
1 1/4 cup granulated sugar
1/4 teaspoon salt
1 egg
1 1/2 teaspoon pure vanilla extract
3 1/2 cups unbleached flour
3/4 teaspoon baking powder
Holiday Sprinkles

Directions:
In a large mixing bowl with a hand mixer (or in a stand mixer), whip together butter and cream cheese.
Add sugar, salt, egg, and vanilla and mix well.
With a fork, slowly combine flour and baking powder.
Divide the dough in two and wrap each section in plastic wrap and refrigerate 1 hour.
Once the dough is chilled, preheat the oven to 375 degrees and line a couple of baking sheets with parchment paper.
Sprinkle your surface and dough with flour and roll out dough to 1/4” thick.
Use a cookie cutter to cut shapes into your dough. If needed, re-roll out dough until all dough is used.
For cookie bites, I used a square cookie cutter and then used a pizza cutter to cut into fourths.
Sprinkle bites with holiday sprinkles and transfer cookies to the prepared baking sheet.
Bake cookies at 375 for 8-9 minutes or until the bottom starts to get slightly brown. Do not over bake.
Let cookies cool for 5 minutes on the baking sheet before moving to a cooling rack.
Once cooled, transfer to a bowl or platter and enjoy.

Notes:
Work with half of the dough at a time so that the dough stays chilled and doesn’t get too soft.
If dough gets too soft while cutting out cookies, put the cookies in the refrigerator for 5-10 minutes before baking.
