My mom gave me this recipe from one of my Grandmother’s Cookbooks and I altered it a little to simplify and work for me. It turned out SO well and I have already made it a few times for special events and occasions! It’s always a hit!
Plus, instead of white sugar you use honey for a “healthier” cake option! Carrots and Honey make this cake practically good for you! 😉
The cream cheese icing is another favorite. It pairs perfectly with this cake. It’s got a special twist that really gives you a burst of flavor with the cake – SO GOOD! I can’t wait for you to try it for yourself!
How to Make a Simple Carrot Cake Recipe
Here’s What You Need:
3/4 Cup Olive Oil
3/4 Cup Honey
2 3/4 Cups Unbleached Flour
1 Tablespoons Baking Soda
1/2 Teaspoon Salt
2 Teaspoons Cinnamon
3/4 Cup Chopped Pecans
2 1/2 Cup Grated Carrots
12 oz cream cheese (softened)
1 1/2 sticks of butter (softened)
1/4 cup honey
1 teaspoon vanilla
1/2 cup powdered sugar
*Chopped Pecans and Coconut to Garnish
Simple Carrot Cake Directions
Heat honey in microwave for 30 seconds.
Cream together eggs, oil, and honey.
In a separate bowl, combine flour, salt, baking soda, and cinnamon.
Mix liquid and flour mixture together.
Add pecans & mix well.
Add Carrots & mix well.
Divide batter in two 8” cake pans.
Bake on 325 Degrees for 25-30 minutes.
Remove cakes from oven and let cool completely.
On a plate or cake stand, place one of the 8” cakes and add a layer of icing.
Add the second cake layer on top and spread icing evenly.
Garnish with pecans and coconut.
Slice, serve, and enjoy!

Amazing Carrot Cake Recipe
YUM! This is hands down my favorite cake recipes! At first I was worried about making a carrot cake because it seemed so intimidating. However, this recipe made it SO easy!
Most of the items in this cake are staples you’d already have in your kitchen. Some Carrot Cake recipes require a bunch of spices, but this one is simple since it just uses cinnamon.
Garnish with Coconut and Pecans, but this is also totally optional!
If you don’t want to double stack your cake like I did, you can bake the cake in a 9×13 baking dish for an even more simple option.
