What you need for Valentine’s Day Hot Chocolate Cupcakes

  • A box of Chocolate Devil’s Food Cake Mix
  • Large Marshmallows
  • Valentine’s Day Sprinkles

How to make Valentine’s Day Hot Chocolate Cupcakes 

Who’s ready to make these delicious Valentine’s Day Hot Chocolate Cupcakes?!? An easy, simple, and delicious Valentine’s day treat!

First, mix the cake mix, eggs, instant pudding, water, and oil together until combined.

Next, add in the chocolate chips to the batter. Using a cookie scoop, pour the batter into the cupcake liners.

Now bake the cupcakes for 30 minutes. Once they are done, twist a marshmallow into each cupcake and bake for 2 more minutes to melt the marshmallow.

While the cupcakes cool, mix together the powdered sugar, cocoa powder, water, and vanilla to make the frosting.

Next, fill the marshmallow indention with mini chocolate chips. (You can push the marshmallow down if you need to.)

Then pour the  chocolate frosting on top of the chocolate chips to cover them.

Finally, cut a marshmallow in half and place it on top of the frosted cupcake. Drizzle a little more chocolate frosting on top and TA-DA! Serve and enjoy!

Valentine’s Day Hot Chocolate Cupcakes

Yields: 22 cupcakes
Preparation time: 10 minutes
Baking time: 30 Minutes
Additional time: 15 minutes

Cupcake Ingredients:
1 Chocolate Devil’s Food Cake Mix
1 Box (3.9oz) Chocolate Instant Pudding
4 Eggs
1 1/4 cup of water
1/2 cup of canola oil
1 12 oz bag of semi-sweet chocolate chips
1 Package of large marshmallows
Valentine’s Day Sprinkles
1/2 cup mini semi-sweet chocolate chips (for garnishing)

Frosting Ingredients:
3 cups powdered sugar
2/3 cups unsweetened cocoa powder
1/2 cup water
1 tablespoon pure vanilla extract

Directions:
Start by preheating your oven to 325 degrees and line a cupcake pan with cupcake liners (you can use super cute heart ones for Valentine’s Day!
Grab a large mixing bowl and mix the cake mix, instant pudding, eggs, water, and canola oil together. I used a hand mixer, but you can also use a fork.
Fold chocolate chips into the cake batter.
Using a large 3 tablespoon cookie scoop, fill cupcake liners about ¾ full with the cake batter.
Bake for 30 minutes and remove cupcakes from the oven.
While the cupcakes are hot, put a large marshmallow in the center of each cupcake and twist it to sink it down into the cupcake.
Put the cupcakes back into the oven for 2 minutes for the marshmallows to melt.
Remove from the oven – you can press the marshmallows down a little if needed.
Let the cupcakes cool in the pan for 10 minutes before moving to a cooling rack.
Create the frosting while the cupcakes cool.
Combine powdered sugar, unsweetened cocoa powder, water, and vanilla and mix until smooth without any lumps.
Fill the marshmallow indention with mini chocolate chips and then cover the chocolate chips with frosting.
Cut large marshmallows in half and put half of a marshmallow on each cupcake and drizzle with frosting.
Garnish with Valentine’s Day Sprinkles and enjoy!
