This Easy Homemade Lime Bars Recipe is one of my new favorite summer desserts!
I am already a fan of these Easy Homemade Lemon Bars, but I had some extra limes laying around the other day and decided to switch up the recipe and make a batch of lime bars!

How to make lime bars from scratch?
First, gather all of your ingredients needed for your lime bars. You will start by making the crust and baking it, so go ahead and preheat your oven to 350 degrees.
Melt the butter and combine flour, powdered sugar, and salt with a fork.
If you are using salted butter, skip the 1/4 teaspoon of salt :).
Press the dough into a 9×13″ pan that has been lined with parchment paper.
Bake your crust until the edges are slightly brown. You can start with baking the crust for about 20 minutes, but mine took a total of 22 minutes.
You can make the lime bars mixture while the crust bakes, but it only takes about 5 minutes to whip together.
In a mixing bowl, lightly beat eggs together before adding the sugar and lime juice. If you want to add 1 teaspoon of lime zest, you can do so now.
Once your crust is done baking, pour your lime mixture over the crust and bake for 15 minutes.
After 15 minutes, take your pan out and carefully cover your lime bars with foil to prevent browning.
Bake for another 20 minutes or until the center is set. You want the center to be done but not over cooked. You also don’t want to burn the crust. If your lime bars need more time, check every 2 minutes.
Once the lime bars are done, remove from oven and sprinkle with powdered sugar and lime zest.
Let bars cool on a cooling rack for 1-2 hours. Cut, serve, enjoy!

2 Sticks of Unsalted Butter
2 Cups Unbleached Flour
1/2 Cup Powdered Sugar
1/4 Teaspoon Salt
4 Eggs
2 Cups Sugar
5 Tablespoons Fresh Lime Juice
Lime Zest and Powdered Sugar to Garnish
Directions:
Preheat Oven to 350º.
Line a 9×13 Glass Baking Dish with Parchment Paper.
For the crust: In a large microwaveable bowl, melt butter in 15-30 second increments until melted and combine flour, powdered sugar, and salt.
Slightly mix with a fork. do not over mix.
Press dough into the prepared pan and bake for 20-22 minutes or until the edges are lightly brown.
While the crust is baking, slightly beat eggs in another mixing bowl.
Whisk in sugar and lime juice until combined.
Pour lime mixture into baked crust as soon as it comes out of the oven.
Bake for 15 minutes.
Remove from the oven, cover with foil, and bake for another 20 minutes or until the center is set.
After the lime bars are done, dust with powdered sugar and lime zest and let the bars cool completely on a wire rack.

Can I make half a recipe of lime bars?
Yes, you can make half a recipe of these lime bars. Just cut all of the ingredients in half and use a square 9″ pan instead of a 9×13″ pan. Keep in mind you might need to adjust your cooking time slightly (I would back the times up 3-5 minutes as a starting point).
Can you substitute regular limes for key limes?
Yes! You can substitute regular limes for key limes for this recipe. If you have a recipe that calls for key limes, you can use all limes, or use half lemon juice and half lime juice for the recipe..
What to do with lots of limes?
If I had a lot of limes to use, I would make fresh guacamole salsa, cherry limeades, and these lime bars! You could also make Lime Cheesecake!
How to store lime bars?
You can store lime bars for 2-3 days at room temperature in an airtight container, or in the refrigerator in an airtight container.
I hope you love these Lime Bars as much as I do! I I must say I almost like these better then my favorite Lemon Bars which is super surprising!! However, both are amazing and perfect for summer barbecues, bridal showers, and birthday parties!
