What you need for Cadbury Oatmeal Chocolate Chip Cookies
- Oatmeal, Miniature Chocolate Chips, and Mini Cadbury Eggs!
- Butter, Sugar, Brown Sugar, Egg, vanilla, Flour, Baking Soda, and Salt!
- I like to use Kosher Salt because of the big flakes – it really takes your cookies to the next level!
- 3 tablespoon cookie scoop – size 20!
These cookies are so simple to make – basically an elevated chocolate chip cookie but packed with miniature Cadbury Eggs and oatmeal – YUM!
How to make Cadbury Egg Easter Cookies
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Cream together the butter, sugar, and brown sugar.
Add the egg and vanilla and mix well. I like to mix mine until just combined without over mixing.
Stir in the flour, baking soda, and salt. I do this all at one time and mix until combined.
Pour in the oatmeal and stir. I want my oatmeal fully incorporated which is why it gets its own step.
Next stir in the chocolate chips and Cadbury Mini Eggs! Be sure to use miniature chocolate chips – it really brings your cookies to a new level!
Once your dough is made it should be pretty thick but still a little sticky.
Use a 3 tablespoon cookie scoop (size 20) to create large cookie dough balls.
Place the cookie dough balls about 3″ apart on the prepared baking sheet and bake for 9 minutes.
Watch the cookies carefully and remove them from the oven when the edges start to brown. 8-9 minutes is the golden time frame, but depending on your oven it could take 10 minutes.
Remove the cookies from the oven and garnish with the remaining crushed Cadbury Mini Eggs! I love doing this to make them look even better!
Let the cookies cool completely on the baking sheet – this part is so important! You want your cookies a little underbaked so they can finish baking on the baking sheet!
Once cooled, or after 10 minutes, transfer to a cooling rack or serving dish and enjoy! Or just eat them straight off the pan :).

1 1/4 cup unbleached flour
1 teaspoon baking soda

1/2 cup quick oats
1 cup mini chocolate chips
1 1/4 cup crushed Cadbury mini eggs (divided)
Directions:

In a medium sized mixing bowl, combine the butter, brown sugar, and sugar and cream them together.
Add the egg and vanilla and mix until combined.
Stir in the flour, baking soda, and salt.
Add the oats to the mixture and mix well.
Fold in the miniature chocolate chips and 1 cup of the crushed Cadbury Mini Eggs.
Use a 3 tablespoon cookie scoop (size 20) and create cookie dough balls and put them 3” apart on the prepared baking sheet.
Bake for 8-9 minutes or until the edges start to brown.
Remove from the oven and top with remaining crushed Cadbury Mini Eggs.
Let cool completely on the baking sheet (at least 10 minutes).
