  • Flour, Eggs, Butter, and Vanilla
  • Caramel Bits and Water
  • 15-20 assorted candy bars (all your favorites!)
  • Toffee pieces and Mini Semi-Sweet Chocolate Chips

The Ultimate Candy Bar Cookies have a brownie mix cookie base, a layer of creamy caramel, pieces of all of your favorite candy bars, and a smooth chocolate drizzle on top!

The caramel makes the brownie soft and chewy with the perfect candy bar texture!

Chocolate Bar Cookies

Chocolate Bar Cookies are sure to be a big hit with a crowd. You’ll make 14-15 cookies with one box of brownie mix, so double the recipe if needed.

If you only have one or two types of chocolate bars when you’re making these cookies, that’s okay! Just use what you have.

Chocolate Bar Cookies are also great cookies to make with candy left over from holidays such as Christmas, Easter, Halloween, and Valentine’s Day!

Grab all of your leftover candy and make these Candy Bar Cookies with whatever you have!

How to make Cookie Bar Brownie Mix Cookies

Start by preheating your oven to 375 degrees. Also, line a baking sheet with parchment paper.

Next, combine the brownie mix and flour together in a medium bowl.

Then add in 2 eggs and the melted butter.

Add the vanilla to the bowl as well.

Next, mix all the ingredients together until combined.

Then, create cookie dough balls using a cookie scoop. Space them about 1″ apart and bake for 8-9 minutes.

Once the cookies have baked, remove them from the oven. Immediately use a cookie cutter to make all the cookies perfect circles and the same size. Let the cookies cool completely on the baking sheet.

Then while the cookies are cooling, prep and chop up all the candy bars.

Next, prepare the caramel sauce. Add 2 teaspoons of water to 1 cups of caramel bits.

Now, microwave for 30 seconds on high. Stir and then keep microwaving in 15 second intervals, stirring in-between, until the caramel sauce is smooth and melted.

Time to decorate these cookies! Spoon about 1-2 teaspoons of caramel sauce on top and spread around. (You have to work quickly here – I decorated about 2-3 cookies at a time.)

Add about 5-6 pieces of chopped up candy on top of each cookie and sprinkle with toffee pieces.

Next, melt 1 cup of mini semi-sweet chocolate chip in a bowl. (Microwave for 30 seconds increments until melted, stirring in-between.)

Then pour the melted chocolate into a zipper bag and cut off the tip of the bag.

Finally, drizzle the melted chocolate over each of the cookies. Let everything cool completely before serving. ENJOY!

Candy Bar Brownie Mix Cookies

Yields: 14-15 cookies
Preparation time: 15 minutes
Baking time: 8 minutes
Additional time: 20 minutes

Ingredients:
1 box of brownie mix (I used Betty Crocker 18.3 ounce box)
1/4 cup all purpose flour
2 eggs
1/4 cup unsalted butter, melted
1 teaspoon vanilla
1 cup caramel bits
2 teaspoons water
About 15-20 Mini assorted candy bars
1 tablespoon toffee pieces for garnishing
1 cup mini semi-sweet chocolate chips

Directions:
Line a baking sheet with parchment paper and preheat the oven to 375 degrees.
In a medium sized mixing bowl, combine the brownie mix and flour together with a fork.
Add the eggs, butter, and vanilla and mix well.
Use a 2 tablespoon cookie scoop and create cookie dough balls. Put them about 1” apart on the baking sheet.
Bake for 8-9 minutes. The edges will look set and the center will look soft.
Remove the cookies from the oven and immediately use a cookie cutter to re-shape the cookies to make perfect circles the same size.
Let cool completely on the baking sheet & bake all of the cookies before adding the toppings.
While the cookies cool, cut your candy bars into pieces.
Next, get the caramel ready by combining the caramel bits and water together.
Microwave on high for 30 seconds. Remove from the microwave and stir. Microwave in 15 second increments, stirring between, until melted and smooth.
Working quickly, about 2-3 cookies at a time, add 1-2 teaspoon caramel to each cookie and spread it out in a circle.
Add 5-6 pieces of candy on top and sprinkle with toffee pieces.
Once all of the cookies have the caramel and candy topping, melt the chocolate chips in the microwave in 30 second increments until melted and smooth, stirring well between.
Transfer the chocolate to a zippered bag and cut the tip off.
Drizzle chocolate over the cookies and let cool completely.

How to store Candy Bar Cookies

Candy Bar Cookies can be stored at room temperature for 4-5 days in an airtight container.

These cookies are also easy to freeze (see below), so you can make a few at a time and freeze the rest.

Can Candy Bar Cookies be frozen? 

Yes! Freeze the Candy Bar Cookies Brownie Mix cookie dough balls in an airtight container for up to 3 months.

Make the brownie mix according to the directions and then when you scoop the batter, place it on a piece of parchment paper until you’re ready to bag them up for the freezer!

If you want to make one or two Candy Bar Brownie Mix Cookies at a time after they have been frozen, just heat 1-2 caramel squares per cookie or 1-2 teaspoons of caramel bits. Add a little water and heat in 15 second increments.

Can I use caramel squares instead of caramel bits in baking?

Yes! You can use the caramel squares! You may want to add just a little water at a time until you know how the caramel will melt.

The water helps the caramel not get too hard after setting.

Can you use bar chocolate for Candy Bar Brownie Mix Cookies?

I prefer to use Candy Bars like Snicker, Kit Kat Bars, and Twix. It’s a little softer than like a Hershey’s bar. But you could totally use a Hershey’s bar if you prefer. Just use what you have and make it your own!

Do you add the candy bars before or after you bake the cookies?

After! If you try to add them before baking, they will melt and spread all over. Wait until the cookies have cooled before adding the chopped chocolate bars.

This will help the chocolate to hold its shape and flavor and also prevent the chocolate from melting.
