Cherry Pie Sugar Cookies Ingredients

Cherry Pie Sugar Cookies

Yields: 14 Cookies
Preparation time: 20 minutes
Baking time: 15 minutes
Additional time: 15 minutes

Ingredients:
1 package of Betty Crocker Sugar Cookie Mix (17.5oz bag)
1 stick of butter, softened
1 egg
1 can of cherry pie filling (21 oz)
1 cup powdered sugar
3 teaspoons water (plus extra if you’d like the glaze thinner)
1/2 Teaspoon Vanilla

Directions:
Line a baking sheet with parchment paper and preheat the oven to 350 degrees.
In a medium sized mixing bowl, with a fork, mix the butter, sugar cookie mix, and egg together until a soft dough forms.
Remove 1/3 cup of cookie dough and set it aside.
Use a 2 tablespoon cookie scoop to create cookie dough balls on the prepared cookie sheet – leave these about 3” apart so they can spread.
Press cookie dough balls down with your fingers.
Bake for 2 minutes.
Remove from the oven and add about 4 cherries onto each cookie using a small spoon or teaspoon.
Then take some of the extra dough that was set aside and put a few small thin pieces of cookie dough on top of the cherries on each cookie (this is what gives it the pie look).
Bake for an additional 13 minutes or until the edges start to brown.
Remove from the oven and cool completely on the baking sheet.
While the cookies cool, combine the powdered sugar, water, and vanilla together to make the glaze.
Drizzle the glaze over the cookies and let cool.

Notes:
If your butter isn’t soft enough, microwave in 5 second increments. Do not melt.
If you want your icing a little thinner, add more water a few drops at a time.
If you want smaller cookies, don’t press the dough down before baking the first time.

Is canned pie filling already cooked?

Yes, canned cherry pie filling is already cooked! When cherries are canned, they are cooked during the process. So the cooking time for these Canned Cherry Pie Cookies is mostly to just bake the cookies. Quick and easy Cherry Cookies!

Can I freeze Cherry Pie Sugar Cookies?

Yes, you can freeze Cherry Pie Cookies! Pie filling is freezer-friendly so it shouldn’t change the texture or consistency of your Cherry Cookies.

I would NOT glaze the cookies before freezing them. Just set them on the counter to thaw a bit and mix up the glaze. Once they are at room temperature, drizzle them with the glaze and they’re ready to serve!

Is it better to freeze cookies baked or unbaked?

For these Cherry Pie Cookies, I would highly recommend freezing AFTER baking them. The cherry pie filling will set and bake into the cookies – which is more ideal for freezing. I LOVE freezing cookies for later to save time, especially for parties and get togethers!
