The perfect amount of peanut butter, mixed with oats and toffee for that slight (but delicious) chocolate bite! A true classic and a personal favorite of mine!

Soft and Chewy Peanut Butter Oatmeal Cookies

The best way to make these Soft and Chewy Peanut Butter Oatmeal Cookies is to not over bake them!

I bake my cookies for about 9 minutes at 350 degrees. Once the edges are slightly brown and the center has begun to set, remove your cookies from the oven. 

Let the cookies cool on the hot baking sheet for several minutes. This allows the cookies to continue to bake while keeping the center soft and chewy! The perfect cookie!

How to make this Easy Peanut Butter Oatmeal Cookies Recipe

First, preheat your oven to 350 degrees.

In a bowl, mix together the softened butter, peanut butter, brown sugar, and granulated sugar with a fork. (I prefer my batter smooth, but it may not be completely smooth – that’s ok.)

Then add in the egg and vanilla. Mix all together until combined.

Next, add in the flour, oats, salt, and baking soda and mix well.

Fold in the toffee pieces so they are mixed all throughout the cookie dough.

(This step is optional, but I LOVE adding the toffee to these Peanut Butter Oatmeal Cookies!)

Using a cookie scoop, make cookie dough balls and space them out on a baking sheet lined with parchment paper. Bake in the oven for 9 minutes (or until the middle looks set).

Once the cookies have finished baking, let them cool for about 10 minutes on the baking sheet. Sprinkle with sea salt to top them off. YUM!

Finally, transfer them to a cooling sheet to finish cooling. Serve and ENJOY!

Baking time: 9 minutes

Ingredients:
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1 1/2 cup quick oats
1/2 cup unbleached flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 cup toffee pieces
Sea salt (for garnishing)

Directions:
Preheat the oven to 350 degrees.
In a medium sized mixing bowl, with a fork, mix the butter, peanut butter, brown sugar, and granulated sugar until creamed – I like my batter pretty smooth, but it may not be completely smooth.
Next, stir in the egg and vanilla extract until mixed well.
Stir in the quick oats, unbleached flour, salt, and baking soda until mixed.
Finally, toss in the toffee pieces and mix well – the toffee is optional, but I love the light crunch and slight chocolate flavor.
Line a baking sheet with parchment paper and use a two tablespoon cookie scoop and spoon cookie dough balls onto the prepared baking sheet about 2” apart.
Bake the cookies for 9 minutes or until the center looks set. I like to remove my cookies from the oven when the edges are slightly brown.
Remove from the oven and immediately garnish with sea salt.
Let the cookies cool on the baking sheet for at least 10 minutes. You can cool completely on a cooling rack or pile onto a serving plate to enjoy.

Notes:
● These cookies are very soft when you take them out of the oven. Be sure to let them cool long enough on the baking sheet to finish baking before transferring them to a cooling rack. This makes the cookies soft and chewy without getting over-baked.
● Cookies can be stored at room temperature for up to 1 week or in the freezer for up to 3 months.
● My favorite part about these cookies is the light peanut butter flavor mixed with the sea salt. The toffee adds a nice crunch with a light chocolate flavor. Cookies are soft and chewy.

How do you know when oatmeal cookies are done baking?

The edges of your cookies will be lightly golden brown. Also, the center of the cookies won’t be wet, but they will look slightly under baked.

This is the best time to take your cookies out of the oven. Leaving them to cool on the hot baking sheet will allow the center to fully cook, but remain soft and chewy!

Why did my oatmeal cookies turn out hard?

Do not over-bake you peanut butter cookies because they will dry out and get too hard. Under-bake them just a little and let them cool completely on the baking sheet. I baked mine for 9 minutes.

Should you refrigerate peanut butter cookie dough before baking?

You can chill your cookie dough, however, with this peanut butter oatmeal cookie recipe, chilling is not necessary.
