  • Reese’s Pieces Candy
  • Peanut Butter Chips

I love the fun option of Brownie Cookies! The chewy deliciousness of a chocolate brownie in a cookie! Great for parties or celebrations, movie nights or family dinners!

I love to slightly under bake my cookies and then let them cool for several minutes on the baking sheet to finish baking. This gives them a soft and chewy center!

Peanut Butter Cup Brownie Cookies with Brownie Mix

These Peanut Butter Cup Brownie Cookies with Brownie Mix are PACKED with all things chocolate and peanut butter! You can even switch out a candy for your favorite Reese’s treat!

The candy I used was a Reese’s Baking Cups and Reese’s Pieces Candy Mix, but you can also use individual Reese’s Mini Unwrapped and Reese’s Pieces.

Reese’s Brownie Mix Cookies

These Reese’s Brownie Mix Cookies are one of the easiest Dessert Recipes you’ll try! Using a box of brownie mix makes them super easy to whip up in minutes! I love how simple it makes the recipe without taking away any of the amazing chocolate flavor! Definitely a must try!

How to make Reese’s Brownie Mix Cookies!

First, start by preheating the oven to 375 degrees. Then line a baking sheet with parchment paper. 

Pour the brownie mix into a bowl and add the flour.

Next, add in the eggs and melted butter.

Then pour in the chocolate syrup and vanilla extract. Mix until everything is well combined.

Next, mix in the Reese’s Baking Cups and the Reese’s Pieces Candy. 

(The Reese’s Pieces Candy I had was already mixed together. But you can also use the individual candies too.)

Use a cookie scoop to make the cookie dough balls. (I used a 2 tablespoon cookie scoop.)

Place them on the baking sheet and space them about 2″ apart.

Next, bake the cookies for 8 minutes. When you remove them from the oven, allow the cookies to cool on the baking sheet for another 10 minutes.

(This will ensure that the cookies will have a soft and chewy center!)

While the cookies are cooling, top them off with a few more Reese’s Baking Chips and Reese’s Pieces Candy.

Finally, allow the cookies to finish cooling on a cooling rack before serving or storing. Enjoy!

Reese’s Brownie Mix Cookies

Yields: 17 cookies
Preparation time: 10 minutes
Baking time: 8 minutes
Additional time: 10 minutes

Ingredients:
1 box of brownie mix (I used Betty Crocker 18.3 ounce box)
1/4 cup all purpose flour
2 eggs
1/4 cup unsalted butter, melted
1 tablespoon chocolate syrup
1 teaspoon pure vanilla extract
1 cup Reese’s Baking Cups and Reese’s Pieces Candy (can use Reese’s Mini Unwrapped and Reese’s Pieces) – divided for the topping
1/2 cup peanut butter chips

Directions:
Line a baking sheet with parchment paper and preheat the oven to 375 degrees.
In a medium size mixing bowl, with a fork, mix the brownie mix and flour together until combined.
Add the eggs, melted butter, chocolate syrup, and vanilla extract and mix well.
Fold ¼ cup Reese’s Baking Chips and Reese’s Pieces Candy (mine was already mixed but you can do the individual candies) and the peanut butter chips into the batter.
Use a 2 tablespoon cookie scoop to create cookie dough balls.
Place them about 2” apart on the baking sheet and bake for 8 minutes.
Remove from the oven and let the cookies cool for at least 10 minutes before transferring them to a cooling rack.
While the cookies cool, press a few Reese’s Baking Chips and Reese’s Pieces Candy on top of each cookie.

Notes:
Cookies can be stored in an airtight container for up to 1 week.
Brownie cookies are soft and chewy. I like to under-bake my cookies for 8 minutes so they stay soft in the middle.
Cookies will continue to cook while they cool on the baking sheet.

What candies do I use for Reese’s Brownie Mix Cookies?

I used peanut butter chips and also the Reese’s Baking Cups and Reese’s Pieces Candy bag. (This was a mixed bag of both mini Reese’s Baking Cups and Reese’s Pieces Candy.) 

You could also use individual candy bags of each candy, the Reese’s Mini Unwrapped and the Reese’s Pieces.
