- Sugar – this is optional for garnishing, but I LOVE adding it!
- Baking Sheet, Parchment Paper, and Cookie Scoop
Simple Peanut Butter Cookies
These Easy Peanut Butter Cookies are SO simple to make! They only have 4 ingredients (and you can leave out the pure vanilla extract if you only want to use 3 ingredients!
So simple you can whip these up in just 5 minutes! Filled with a lot of peanut butter flavor but not super sweet! If you want them sweeter, add a full cup of sugar.

If you have crunchy peanut butter in your pantry, don’t hesitate to reach for it to make these cookies! I love the added crunch of Crunchy Peanut Butter with pieces of peanuts in the cookie!
You can always substitute for creamy peanut butter if that’s what you have in your pantry, but do yourself a favor and try these Peanut Butter Cookies with Crunchy Peanut Butter!
Brown Sugar Peanut Butter Cookies
If you want a soft and chewy peanut butter cookie, use brown sugar instead of granulated sugar! This recipe calls for brown sugar and I love the texture of the cookies.
If you don’t have any brown sugar, granulated sugar is a perfect substitution, but your cookies may not be as soft or stay as soft after they cool.
How to make Simple 4 Ingredient Peanut Butter Cookies with Brown Sugar!
First, start by lining a baking sheet with parchment paper and preheating the oven to 350 degrees.
Next, add the brown sugar and crunchy peanut butter to a bowl.
Now, add in the egg and vanilla. Mix until all the ingredients are combined.
You’re cookie dough with be wet. Use a cookie scoop to make cookie dough balls and space them on the baking sheet about 2″ apart. (I used a 2 tablespoon scoop)
Using a fork, press down in to the cookie to make the crosshatch pattern. Sprinkle with a bit of sugar if you’d like, then bake for 9 minutes.
Then, once the cookies are finished baking, you can use a cookie cutter to shape the size of the cookies. (Also, touch up the crosshatch pattern if you need to.)
Finally, sprinkle more sugar on top (this is optional). Let the cookies cool completely before eating! Serve and enjoy!

Yields: 9 Cookies
Preparation time: 5 minutes
Baking time: 9 minutes
Additional time: 10 minutes
Ingredients:
1 cup crunchy peanut butter (I used Peter Pan)
3/4 cup light brown sugar
1 egg
1 teaspoon pure vanilla extract
½ teaspoon sugar (optional for garnishing – but not needed)
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a medium size mixing bowl, mix the peanut butter, brown sugar, egg, and vanilla together until combined (dough will be wet).
Use a 2 tablespoon cookie scoop to create cookie dough balls and place them about 2” apart on the baking sheet.
Use a fork to create the crosshatch pattern on top which also helps to press the dough down a little.
Bake for 9 minutes.
Remove from the oven and shape with a cookie cutter to make your cookies the same size and shape. You may need to touch up the crosshatch pattern and garnish with a dash of granulated sugar (optional).
Let cool for 10 minutes on the baking sheet before moving the cookies to a cooling rack to cool completely.
Notes:
● Be sure to let the cookies cool on the baking sheet first before transferring them so that the center can set/bake completely.
● Store for 3-4 days at room temperature in an airtight container.
● Don’t worry about freezing this recipe, I’m sure it can be done, but it’s such a simple recipe it’s easier to make a fresh batch verse trying to freeze the sticky dough.
