I am a HUGE fan of Chips and Salsa! Who’s with me!?
My favorite quote (and I have no clue where it’s from) is, “You never realize how little self-control you have until chips and salsa are in front of you at a Mexican restaurant”.
This is SO true, but not only just at a Mexican restaurant, pretty much anytime chips and salsa is in front of me, LOL!
However; there is one thing that can make me say “no” when it comes to chips and salsa, and that is when the salsa is made with cilantro.
I absolutely cannot stand the taste of cilantro, and apparently I’m not alone. This seems to be an issue for about 20% of the population for reasons I will share more about below!
Having a homemade salsa or pico de gallo recipe on hand that doesn’t include cilantro makes my heart so happy and is perfect for backyard barbecues, tailgating, tacos, or fajitas!

Homemade Pico De Gallo Without Cilantro
Here is an easy and fresh salsa recipe for Pico De Gallo. Grab the ingredients from your garden or local farmers market. Some of my favorite items to grow in my garden are bell peppers, Jalapeños, and tomatoes! If you don’t have a garden, getting these from your local farmer’s market is another great option for fresh pico de gallo!
Ingredients for Pico De Gallo Without Cilantro
4 medium tomatoes (1 1/2 pounds)
1/2 Cup Finely Chopped Onion
½ Cup Finely Chopped Celery
1/4 Cup Finely Chopped Green Bell Pepper
1/4 Cup Olive Oil
1 Finely Chopped Jalapeño Chili Pepper
2 Tbsp Red Wine Vinegar
1 Tsp Mustard Seed
1 Tsp Coriander Seed, Crushed
1 Tsp Salt
Dash of Pepper
Directions for Pico De Gallo Without Cilantro
If the tomato skins are thick you can peel them by dipping the tomatoes into boiling water for 30 seconds then plunging them into cold water. The skins will slip off.
Chop tomatoes and combine with chopped onion, celery, jalapeño chili peppers, vinegar, mustard seed, coriander seed, salt and pepper.
Cover and refrigerate several hours or overnight, stirring occasionally.
Note: This recipe is kid-friendly and super mild. If you want to add a little more “heat”, just add a few more jalapeño chili peppers. 🙂

Why Some People Can’t Stand Cilantro
This is a great recipe for people who can’t stand cilantro. For some people, the taste of cilantro is just not enjoyable. I can attest to all of this because I happen to be one of those people who absolutely cannot stand cilantro. Who’s with me?! Apparently about 20% of the population find cilantro to taste awful (YEP!). Some say it tastes like soap or stink bugs. Research shows that the issue is genetic. People who have a particular variation in a group of olfactory-receptor genes can taste the soapy-flavored aldehydes in cilantro leaves.
What Is a Good Substitute for Cilantro In Salsa?
Apparently the seeds of the plant, coriander, don’t seem to cause the same issue as cilantro for the people who can’t stand it. Coriander is a good substitute for salsa without cilantro. However, you can always just omit either one all together and still have a great fresh-tasting salsa dip recipe!
I hope you enjoy this recipe as much as we do! I’m glad we are all in this “no cilantro” club together! 😉
