How to make Easy S’mores Cookies Recipe!

The Best S’mores Cookies! Great for afternoon snacks, dessert, or gifts for friends!

First, cream together the sugar, brown sugar, and butter. Then mix in the egg and vanilla.

Next, add the salt, baking soda, and flour. Mix all together until fully combined.

Break up 2 Hershey’s bars and add them to the cookie dough – as well as the mini marshmallows and chocolate chips. Then refrigerate your cookie dough for at least 30 minutes to keep your cookies from spreading.

Now, using a cookie scoop, make cookie dough balls and roll them around in the crushed graham crackers. (Make sure to save some graham crackers for garnishing at the end!)

Space your cookies out about 3″ apart on your cookie sheet since they will spread while baking. Bake your cookies at 350 degrees for 7 minutes.

Take your “half-baked” cookies out of the oven and push a big marshmallow in the center of each cookie. Bake them for 3 more minutes. (You can even turn on the broiler for a few seconds to toast the marshmallows. Just watch them carefully so they won’t burn!)

Finally, let the cookies cool for about 10 minutes. Then top each one with a Hershey’s square and the rest of the crushed graham crackers. ENJOY!

Easy S’mores Cookies Recipe

Yields: 13 cookies
Preparation time: 15 minutes
Baking time: 10 Minutes
Additional time: 6 Minutes

Ingredients:
1/2 cup unsalted butter – room temperature
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon pure vanilla extract
1 cup unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mini marshmallows
1 cup graham cracker crumbs roughly smashed (divided)
4 Hershey bars (divided)
1/4 cup chocolate chips
13-15 large marshmallows

Directions:
Preheat the oven to 350 and line a baking sheet with parchment paper.
Cream together butter and both sugars.
Add the egg and vanilla and mix well.
Next, add the dry ingredients – flour, baking soda, and salt and mix well.
Gently mix in the mini marshmallows, 2 Hershey bars that have been broken into pieces, and chocolate chips.
Refrigerate dough for 30 minutes or longer (this will help your cookies not to spread too much since the marshmallows get melty).
Create a generous sized cookie dough ball using a 2 tablespoon cookie scoop and roll those balls into about 3/4 cup of the crushed graham crackers (save 1/4 for garnishing).
Put the cookies 3” apart on the baking sheet because cookies will spread.
Bake for 7 minutes.
Remove from the oven and press a large marshmallow in the center of each cookie (if the marshmallows are running, use a spoon to scoop the edges back into the cookies).
Bake for another 3 minutes (if you want to toast the marshmallows even more, turn on the broiler for 30 seconds to 1 minute . Just don’t take your eyes off the cookies or they will burn).
Remove from the oven and let cool for 10 minutes. Add a Hershey square on top and sprinkle with remaining graham cracker crumbs.
