How to make Strawberry Brownies

Strawberry brownies are super easy to make with a Strawberry Betty Crocker Cake Mix! Start with making this Strawberry Sauce to add to your strawberry brownies! 

This sauce is completely optional, but adds a burst of strawberry flavor. If you decide to skip the strawberry sauce, use 1/3 cup lemon juice instead. 

Homemade Strawberry Sauce

Make this sauce to use in the brownies and the glaze! You will want to divide this sauce after you make it. Double the recipe to add a little extra to the glaze or to drizzle on top of brownies. 

Strawberry Sauce Ingredients:
2 tablespoons water
2 tablespoons white granulated sugar
1/2 cup fresh strawberries (chopped)
1/4 teaspoon pure vanilla extract

Strawberry Sauce Directions:
In a small saucepan, whisk the water and sugar over medium heat until dissolved completely.
Add strawberries and simmer on low for 10 minutes. Mash and whisk strawberries occasionally while they simmer.
Remove from heat and add vanilla.
Divide sauce – 1/4 cup for brownies and 1 tablespoon for glaze.

Strawberry Brownies Recipe

Ingredients:
1 box strawberry cake mix (betty crocker)
2 large eggs
1/4 cup strawberry sauce
1 tablespoon lemon juice
1/2 cup fresh strawberries

Glaze:
1 cup powdered sugar
1 tablespoon strawberry sauce
Water until desired consistency

Directions:
Make strawberry sauce according to the directions above.
Preheat the oven to 350 degrees and line an 8” or 9” square baking dish with parchment paper. Spray well with cooking spray.
In a medium sized bowl, combine cake mix, eggs, strawberry sauce, and lemon juice with a fork.
Fold in fresh strawberries and transfer batter to the prepared baking dish.
Bake 25-27 minutes or until the center is set and a toothpick comes out clean.
Remove from the oven and allow to cool in the pan for 20 minutes to finish baking completely.
Lift parchment paper out of the pan and place on a cooling rack.
Make the glaze by combining powdered sugar, strawberry sauce, and water (I used about 2 teaspoons of water).
Pour glaze over brownies and spread it evenly.
Cut brownies into 9 pieces.

Notes:

  • Add more water to glaze if it is too thick. If it gets too thin, add extra powdered sugar.
  • Add a drop of red food coloring to the glaze to enhance the pink color.
