What you need for Lemon Cake Mix Cookies
- You don’t need much at all! Only a lemon cake mix (I used Betty Crocker), Eggs, Canola Oil, and Vanilla (and even the vanilla is optional)!
- For the glaze you need powdered sugar, lemon juice, and vanilla! Add a little lemon zest for garnishing too!
- 20 minutes! Yep, that’s all you need to make these cookies! Whip them together and then bake them – YUMMM!!
How to Make Lemon Cake Mix Cookies
Ready to make these amazing cookies?!? Be sure to bring them to your next barbecue or pool party!
First, pour the lemon cake mix into a bowl.
Add in the eggs, vanilla, and oil. Combine all the ingredients together.
Next, use a cookie scoop to create the cookie dough balls. Place them on a baking sheet lined with parchment paper and bake for 9-10 minutes.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack to finish cooling.
Now it’s time to make the glaze! Combine the powdered sugar, vanilla, and lemon juice.
Then, carefully spoon the glaze on top of the cookies.
Finally, sprinkle on a little bit of lemon zest for the finishing touch! Serve and ENJOY!

Yields 13 cookies
Preparation time: 7 minutes
Cooking time: 10 minutes
Additional time: 5 minutes
Ingredients:
1 box lemon cake mix (I used Betty Crocker)
2 large eggs
1/3 cup canola oil or vegetable oil
1 teaspoon pure vanilla extract or lemon extract
Lemon Glaze Ingredients:
2 cups powdered/confectioners sugar
2-3 tablespoons lemon juice or water
1 teaspoon vanilla
1 teaspoon lemon zest
Directions:
Start by preheating the oven to 350 degrees and line a baking sheet with parchment paper.
Mix lemon cake mix, eggs, oil, and vanilla in a large mixing bowl until combined (option to use a hand mixer or fork).
Use a 2 tablespoon cookie scoop to create cookie dough balls and place them about 2” apart on the baking sheet.
Bake for 9-10 minutes.
When the center is set or the edges start to brown, remove from the oven and let cool on the baking sheet.
While the cookies cool, make the lemon glaze by combining powdered sugar, 2 tablespoons lemon juice, and vanilla.
Add extra lemon juice if needed, but add the third tablespoon slowly and stir while you add so it doesn’t get too thin.
Transfer cookies to a cooling rack and drizzle or spoon lemon glaze over each cookie (you may want to put parchment paper or foil under cookies so the glaze is easy to clean up).
Garnish with lemon zest (optional) and let cool completely.

How to get even more Lemon Flavor in Lemon Cake Mix Cookies
If you are looking for even more of a lemon flavor in your cookies, substitute the vanilla for lemon flavoring. This will add a burst of lemon flavor to your cookies!
Another way to get more lemon flavor is by using lemon juice to make the glaze instead of water.
However, if you want less lemon flavor with only a hint of lemon, keep the vanilla in the cookies and use water to make the glaze! Super easy substitutions that leave you with a great result either way!
How to make Lemon Glaze for Lemon Cake Mix Cookies
Lemon glaze is SO easy!! Combine powdered sugar with either water or lemon juice (depending how much lemon flavor you want), a little vanilla, and lemon zest (optional).
The glaze on these cookies is better when it’s thick, so I add the water or lemon juice very slowly so that the consistency doesn’t get to thin.
