These Pecan Pie Bars are packed with chocolate chips, pecans, and coconut. Made with a pre-made pie crust they are super easy to whip up in no time. 

Pecan Pie Bars Recipe

Here’s What You Need 

Ingredients:
1 pre-made pie crust (set out 15 minutes before using)
1 stick of unsalted butter
1/4 cup flour
1 Cup sugar
1 Tablespoon vanilla
2 eggs
3/4 cup mini chocolate chips
3/4 cup roughly chopped pecans
1/2 cup sweetened coconut flakes

Directions:
Preheat the oven to 325 degrees.
Line a 9×13” pan with parchment paper.
Roll out pie crust into pan – press the pie crust to fit a rectangular pan.
Heat butter in the microwave in 15 second increments until melted.
Beat eggs and add flour, sugar, vanilla and eggs to the butter and mix well.
Stir in chocolate chips, pecans, and coconut flakes.
Pour the mixture over the prepared unbaked pie crust and spread evenly.
Bake for 40-42 minutes or until pie is set (you don’t want the top to crack).
Take the pie out of the oven and let cool completely (the pie may take 2 hours or more to firm up and cool completely).
Remove the parchment paper from the baking dish and cut into squares.

Can I use a homemade pie crust from scratch?

Yes, you can use a homemade pie crust from scratch! This is my favorite Easy Pie Crust Recipe with Cream Cheese! It goes great with this pie bars recipe, however, when you form the dough after you make it, I’d make a rectangle instead of a circle to accommodate the 9×13″ pan.

Can I leave out the Coconut? 

Yes! If you are looking for Pecan Pie Bars without Coconut, you can totally omit them from this recipe and add extra pecans. 

Can I leave out the chocolate chips?

Yes! if you want to omit the chocolate chips from this recipe and add in pecans, that would be fine! I would just add something else in (either pecans or coconut) in the same amount so that the pie is the same consistency. 

Step by Step Pecan Pie Bars Instructions: 

In a medium sized, microwave safe, mixing bowl, melt your butter and combine butter, flour, sugar, and eggs (beaten) together. 

Stir in chocolate chips, pecans, and coconut. That’s it! That’s how simple the pie filling is for this recipe! 

Press the pre-made pie crust into your 9×13″ pan that has been lined with parchment paper. You will have to work the crust a little since it’s a round crust going into a rectangle pan – but it works! The parchment paper helps the pie not to stick to the pan so that you can easily remove the pie and cut it into bars for serving. 

Pour your mixture into the prepared pie crust and spread it evenly. Bake for around 40-42 minutes or until the pie is set – you don’t want the top to start cracking. Let the pie cool completely before you remove the parchment paper and cut into bars. 

If you want to eat it right out of the oven it’s DELICIOUS! It just won’t be set enough yet to cut it into bars. It could take up to 2 hours to set completely.
