Here’s what you will need to make these Pumpkin Cake Mix Cookies!

  • A box of spice cake mix! I used Duncan Hines, but you could really use any brand of your choosing. 
  • 2 Eggs
  • Pure Pumpkin Puree 
  • Vanilla (optional)

Is Pumpkin a good egg substitute?

Yes!! Pure Pumpkin Puree is actually a super simple substitute for eggs when baking! It’s also super healthy. 

If you’d like to make 2 ingredient pumpkin spice cake mix cookies, you can always just use a box of cake mix and a 15 oz can of pumpkin puree!

How do you substitute pumpkin for oil and eggs?

Pumpkin is a very easy baking substitute when cooking for the fall. You can substitute pumpkin for oil and eggs in almost any recipe.

For eggs, substitute 1/4 cup of pumpkin puree for every egg. If the recipe calls for 2 eggs, use 1/2 cup of pumpkin puree.

For oil, use the same amount of pumpkin puree as oil needed (if 1/3 cup of oil is needed, use 1/3 cup pumpkin puree).

How to Make Pumpkin Cake Mix Cookies

These cookies are SO simple and are the perfect way to kick off the Fall season!

First, add the cake mix, eggs, pumpkin puree, and vanilla to a bowl.

Second, mix the ingredients together until completely combined.

Next, scoop out the cookie dough balls using a cookie scoop or a spoon and place them on a prepared baking sheet. Pat down the cookie balls gently then BAKE!

Let the cookies cool for a few minutes on the baking sheet before transferring them to a cooling rack. Time to make the frosting!

First, cream together the butter and cream cheese in a bowl. (We don’t want any clumps!)

Next, add the powdered sugar, vanilla, and cinnamon and beat altogether.

Using a spoon, frost the cookies and top them off with a little sprinkle of cinnamon. YUM!

Pumpkin Cake Mix Cookies Recipe

Yields: 20 cookies
Preparation time: 7 minutes
Cook time: 9 minutes
Additional Time: 10 minutes

Ingredients:
1 box spice cake mix (I used Duncan Hines)
2 eggs
1/3 cup pure pumpkin puree
1/2 teaspoon vanilla

Cinnamon Cream Cheese Frosting Ingredients:
8 ounces full fat cream cheese (softened)
1/2 cup unsalted butter (softened)
1 cup powdered/confectioners sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon (divided)

Directions:
Preheat the oven to 350 degrees.
In a large mixing bowl combine cake mix, eggs, pumpkin puree, and vanilla and mix well with a fork (or you could use a hand or stand mixer).
Create heaping 1 tablespoon cookie dough balls with a cookie scoop or spoon and place them about 2 inches apart on a baking sheet that has been lined with parchment paper (dough will be wet and sticky).
Gently pat down the cookie dough balls (but no need to roll them into a ball).
Bake for 9-10 minutes.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
While the cookies cool, make the frosting.
Using a hand mixer, beat cream cheese and butter together on low in a medium sized mixing bowl until there are no clumps.
Add powdered sugar, vanilla, and 1/4 teaspoon cinnamon and beat well.
Spoon frosting onto cookies and sprinkle with remaining cinnamon (optional).

Cinnamon Cream Cheese Frosting Tips

If your cream cheese and butter are not soft enough, you can microwave them in a microwave safe bowl in 10 second increments.
