How to make Strawberry Lemon Shortcake Cookies!
These AMAZING Strawberry Lemon Cookies are a MUST TRY this Spring and Summer! Super easy and delicious – packed with tasty flavors like Lemon and Fresh Strawberries!
First, preheat your oven to 350 degrees. Add your flour, sugar, baking powder, and salt to a bowl and mix together.
Next, use your hands or a pastry cutter to “cut” in the cold butter. Do this until the mixture is crumbly.
Then pour the milk into to the cookie mixture. Mix together until the cookie dough begins to form.
Time for the STRAWBERRIES! In a separate bowl, mix together the strawberries, sugar, and lemon juice.
Carefully fold the strawberries into the cookie dough and add in the lemon zest. I love the POP of flavor this brings to the cookies!
Next, use a cookie scoop to create cookie dough balls and place them on a baking sheet lined with parchment paper. (Space them out about 2″ apart.) Bake them in the oven for 12 minutes.
Once the cookies have baked, let them cool on the baking sheet for 8 minutes. Then move them to a cooling rack.
For the glaze, mix the powdered sugar and lemon juice together.
Finally, drizzle the glaze over the cookies and serve! The PERFECT Summertime treat!
Strawberry Lemon Shortcake Cookies
Yields: 19 cookies
Preparation time: 15 minutes
Baking time: 12 minutes
Additional time: 10 minutes
Ingredients:
2 cups unbleached flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
2/3 cup whole milk
1 cup frozen strawberries, chopped
1 tablespoon granulated sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
Glaze:
1 cup powdered sugar
2 tablespoons lemon juice
Directions:
Preheat the oven to 350 degrees.
In a medium sized mixing bowl, whisk together flour, sugar, baking powder, and salt.
Cut in cold butter (using your hands or a pastry cutter) until crumbly.
Add the milk and stir until the dough starts to come together.
In a small bowl, mix together strawberries, 1 tablespoon sugar, and lemon juice.
Fold the strawberry mixture into the prepared batter and add the lemon zest.
Use a two tablespoon cookie scoop and scoop mixture to create a cookie dough ball and place them on a baking sheet that has been prepared with parchment paper.
Place cookies about 2” apart.
Bake for 12 minutes.
Remove from the oven and let cool on the baking sheet for 8 minutes before transferring to a cooling rack.
Once the cookies are cooled completely, make the glaze.
Make the glaze by combining the powdered sugar and lemon juice together.
Drizzle glaze over cookies and let cool completely.
Notes:

Is shortbread cookies the same as shortcake cookies?
Shortcake cookies and shortbread cookies are similar, but they ARE different! Shortbread doesn’t contain any baking powder, making them more dense. Shortbread cookies have a more crumbly texture while shortcake cookies are more chewy and soft.
Can you use half butter and half shortening in Strawberry Lemon Cookies?
Yes! You absolutely can, although I prefer to use all butter. Just make sure your “butter” is REAL butter, not margarine. It adds a richer flavor to your cookies!
What is the trick to making Soft Strawberry Lemon Cookies?
The baking time and temperature of your oven! You want to baking your cookies for a SHORT time in a HOT oven. This will make your cookies soft and chewy! (Yum!) I prefer to take my cookies out a minute or two before they’re fully baked and let them finish baking on the hot baking sheet. Soft and chewy cookies every time!
