Easy Brownie Mix Cookies
Easy Brownie Mix Cookies are made from simple and easy ingredients that I always have on hand!
You’ll need a box of Brownie Mix, Flour, Eggs, Butter, Chocolate Syrup, Vanilla, and Mini Semi-Sweet Chocolate Chips.
Bake them for 8-9 minutes depending on how gooey you like your cookies! I love my cookies slightly gooey in the middle – SO GOOD!
How to make Brownie Chocolate Chip Cookies
First, start by lining a baking sheet with parchment paper and preheating the oven to 375 degrees.
Add the brownie mix to a medium bowl and mix in the flour.
Next, mix in the butter, eggs, chocolate syrup, and vanilla.
Then, add in the chocolate chips. Mix all together until fully combined.
Create cookie dough balls (using a cookie scoop) and place them on the baking sheet. Space them about 2″ apart on the baking sheet, then baking them for 8-9 minutes.
When the cookie are finished baking, the edges will be set and the middle will probably still look soft.
If you prefer, you can bake them an additional minute for the center to set. (I prefer my cookies more gooey!)
Finally, allow your cookies to completely cool on the baking sheet before serving. ENJOY!

Yields 18 cookies
Preparation time: 5 minutes
Baking time: 8 minutes
Additional time: 10 minutes
Ingredients:
1 box of brownie mix (I used Betty Crocker 18.3 ounce box)
1/4 cup all purpose flour
2 eggs
1/4 cup unsalted butter, melted
1 tablespoon chocolate syrup
1 teaspoon vanilla
1 cup mini semi-sweet chocolate chips
Directions:
Preheat the oven to 375 and line a baking sheet with parchment paper.
In a medium sized mixing bowl, combine the brownie mix and flour together.
Add the eggs, butter, chocolate syrup, and vanilla and mix well.
Stir in the chocolate chips.
Use a 2 tablespoon cookie scoop to create cookie dough balls and place them about 2” apart on the baking sheet.
Bake for 8-9 minutes. The edges of the cookie will look set and the center may still look soft. Cook an additional minute if desired for the center to set, or leave gooey.
Let the cookies cool completely on the baking sheet or at least for 10 minutes for the center to set.
Notes:
The chocolate chips and chocolate syrup help make the cookies soft and gooey but can be omitted if desired.
Do not over bake the cookies or they will become hard.
Cookies can be stored in an airtight container at room temperature for up to 1 week.
Cookie dough can be frozen in an airtight container for up to 3 months – I like to create cookie dough balls before freezing.

What is the difference between Brownies and Brownie Chocolate Chip Cookies?
Brownie Chocolate Chip Cookies will have a thicker batter. Brownie batter, although still thick, will be thinner and shiner.
Brownie Chocolate Chip Cookies have more flour which allow them to hold their “cookie” shape.
What is the secret to chewy Brownie Chocolate Chip Cookies?
Don’t over bake them! You’ll want to bake your cookies for about 8-9 minutes.
The edges will be set, but the center will be soft. Leaving the cookies to cool on the baking sheet will allow them to “finish baking” while leaving the center of the cookie nice and gooey. (My personal favorite!)
If you don’t prefer your cookie as gooey, then bake for an additional minute in the oven. This will set the center of the cookie – but don’t over bake or your cookie will be too hard and dry.
