To make this recipe, you start with a basic sugar cookie bar from scratch! It’s my all-time favorite sugar cookie recipe and the icing on top is perfection!

A couple of main differences are that sugar cookies are typically sweeter than shortbread cookies, and also are lighter and crisper. The thing I love about this sugar cookie bar is that it has all of the flavor of sugar cookies but is really soft and chewy.
Should Sugar Cookies be hard or soft?
If you are having a hard time with the consistency of your sugar cookies, think about the butter. If your butter is too soft than you may have to refrigerate the dough for longer before y you bake them so that the cookies don’t spread. A good rule of thumb for softening butter for sugar cookies is to take the butter out of the fridge and put it in the microwave for 10-15 seconds max.
Why did my Sugar Cookies Spread?
Sometimes Sugar Cookies Spread because the butter is too soft (see above) or there is too much butter and sugar. You also don’t want your cookies dry and flaky, which means you have too much flour. Chill your cookie dough before you bake the cookies to keep them from spreading too much.

These Cookie bars are so easy to make! Plus, I love that you can make them homemade from scratch from the items you already have in your pantry! Perfect if you are needing a last minute holiday dessert recipe for halloween! Combine all of the wet ingredients and then all of the dry ingredients. Mix together well and bake. After the cookie bar is done, it’s super important that it cools completely before you frost it or your icing will melt completely.

I like to use a hand mixer to mix the sugar cookie batter since it’s so thick.

Pour the batter into a baking dish that has been lined with parchment paper!
After they are baked, let them cool completely – this is SO important!
While the cookie bars cool, grab all of your ingredients for the frosting!
Combine all of the frosting ingredients and mix well!
Once the cookie bar is cooled completely, spread the frosting over the cookie bar and sprinkle with more Candy Corn!
Candy Corn Cookie Bars Recipe
Cookie Base Ingredients:
1 Cup unsalted butter (softened)
4 oz cream cheese (softened)
2 Cups sugar
2 large eggs + 1 egg white
2 teaspoons vanilla extract
2 ½ Cups unbleached flour
½ teaspoon baking powder
1 teaspoon salt
1 Cup Candy Corn
Frosting Ingredients:
1 Cup unsalted butter (softened)
2 Cups powdered sugar
1 teaspoon vanilla extract
¼ teaspoon salt
Candy Corn Cookie Bar Directions
Preheat oven to 350 degrees.
Line a 9×13 baking dish with parchment paper and lightly spray with cooking spray.
Combine butter and cream cheese with an electric mixer.
Add sugar and mix well.
Mix in the eggs and vanilla.
Add in flour, baking powder, and salt.
Mix well until dough forms.
Fold in candy corn.
Pour batter into pan and bake for 30 – 35 minutes or until edges are lightly browned.
Remove from oven and let cool completely *this is very important*
While the cookie is cooling, make the frosting.
For the frosting, mix all ingredients together until smooth.
Once the cookie is cooled, spread the icing evenly onto the cookie.
Sprinkle candy corn on top and cut into squares or bars.
