What you need for Brownie Easter Cookies
- A brownie mix! I like to use a dark chocolate brownie mix, but you can use fudge brownie mix too!
- Holiday Sprinkles! Be sure to use “Jimmies Sprinkles”, which are the straight line sprinkles, or the little ball sprinkles called “nonpareils”.. If your sprinkles are too thick they will melt in the oven so stay away from the shaped sprinkles like bunnies and hearts.
- Chocolate kisses! They add a burst of chocolate flavor and are brownie perfection – i love to eat them when they are warm and gooey!
How to make Brownie Blossom Easter Cookies
Preheat the oven to 375 degrees and line a baking sheet with parchment paper. I like to use parchment paper over silpat baking sheets personally, but you can use either.
Use a medium sized mixing bowl and stir the brownie mix and flour together.
Add the eggs, melted butter, chocolate syrup, and vanilla to the mixing bowl and mix until combined.
Stir in the miniature chocolate and mix until combined.
Use a one tablespoon cookie scoop and create cookie dough balls.
Roll each cookie dough ball in the holiday sprinkles and then place them on the baking sheet about 1.5″ apart.
Bake for 8 minutes and then remove from the oven.
Once out of the oven let them cool on the baking sheet for about 3 minutes and then place a chocolate kiss in the middle and let cool completely on the baking sheet.
Brownie Easter Cookies Recipe
Yields: 36 cookies
Preparation time: 20 minutes
Baking time: 8 minutes
Additional time: 10 minutes
Ingredients:
1 box of dark chocolate brownie mix (I used Duncan Hines Dark Chocolate 18.2 ounce box)
1/4 cup all purpose flour
2 eggs
1/4 cup unsalted butter, melted
1 tablespoon chocolate syrup
1 teaspoon vanilla
1 cup mini chocolate chips
1 cup of holiday sprinkles
36 chocolate kisses
Directions:
Pre-heat the oven to 375 degrees and line a baking sheet with parchment paper.
Use a medium sized mixing bowl and mix the brownie mix and all purpose flour together until combined.
Add the eggs, melted butter, chocolate syrup, and vanilla to the brownie mix and flour mixture and mix until just combined.
Add the chocolate chips and mix well.
Use a one tablespoon cookie scoop to create cookie dough balls.
Roll each cookie dough ball in the holiday sprinkles and place them on the prepared baking sheet about 1.5” apart.
Bake the cookies for 8 minutes and then remove from the oven and let cool for about 3 minutes before pressing one chocolate kiss in the middle of each cookie.
Let the cookies cool completely on the baking sheet and enjoy!
Notes:
- Watch the cookies carefully while they are baking. You do not want to over bake the cookies.
- Change up the holiday sprinkles for any holiday.
- Be sure to use “Jimmies Sprinkles”, which are the straight line sprinkles, or the little ball sprinkles called “nonpareils”.. If your sprinkles are too thick they will melt in the oven so stay away from the shaped sprinkles like stars and hearts.
- Store cookies in an airtight container for up to 1 week at room temperature.

What’s the difference between a brownie cookie and a chocolate cookie?
The main difference is a brownie cookie is soft and chewy and a chocolate cookie is harder made from pantry ingredients.
Brownie cookies can be made from a box of brownie mix or from scratch, but brownie cookies have a higher fat/liquid contents so they are made from a batter.

What makes brownie cookies fudgy?
I think adding the chocolate syrup and chocolate chips makes them fudgy! You can make them without these ingredients but they will be more cake-like.
