Easy Peanut Butter Cup Cookies
Also, if we are talking scale of 1-10 easy, these are a 2. SO EASY for kids and beginner bakers. BUT they yield and turn out amazing results!
Seriously, it only takes 4 ingredients and one of those is the peanut butter cups.
Mix everything together in one bowl, bake the cookies, then pop on a Reese’s!
I feel like i’m cheating every time I make these, but they are always such a huge hit!
How to make Peanut Butter Cup Cookies
First, you want to put your peanut butter cups in the freezer so they won’t melt as much when you add them on top of the cookies – however, if you like them melty, you can skip this step… they may just not hold their form as well.
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a mixing bowl, combine the peanut butter, 1 cup of sugar, and egg together and mix well.
Dough will be a little sticky.
Use a two tablespoon cookie scoop to create cookie dough balls.
Roll each cookie dough ball in the remaining sugar before placing them on the baking sheet.
Place them on the prepared baking sheet and press the top down just a little bit with a fork to create the classic peanut butter lines on top.
Bake for 9 minutes.
Remove from the oven and let cool on the baking sheet for 5 minutes before pressing a peanut butter cup onto the top of each cookie.
Let cool completely on the baking sheet.
Easy Peanut Butter Cup Cookies Recipe
Yields: 14 Cookies
Preparation time: 5 minutes
Baking time: 9 minutes
Additional time: 15 minutes
Ingredients:
1 ½ cup granulated sugar, divided
1 cup peanut butter (I used Sam’s Members Mark Creamy Natural, No-Stir Peanut Butter)
1 egg
14 Reese’s Cups
Directions:
Place your peanut butter cups in the freezer while you make this recipe so they get nice and cold.
Line a baking sheet with parchment paper and preheat the oven to 350 degrees.
In a small mixing bowl, combine 1 cup sugar, peanut butter, and egg together.
Use a two tablespoon cookie scoop to create cookie dough balls and roll each cookie dough ball in the remaining granulated sugar.
Place the cookie dough balls about 2” apart on the prepared baking sheet.
Use a fork to create criss cross lines by gently pushing down. You want the cookies to stay thick and not spread too much so don’t press down too hard when you make the criss cross lines.
Bake the cookies for 9 minutes or until the top looks set – do not over bake.
Remove from the oven and let cool on the baking sheet for 2-3 minutes.
Remove the peanut butter cups from the freezer and press a peanut butter cup onto the center of each cookie and let cool completely on the baking sheet or serve warm while the chocolate is melty.
Notes:
- If you want the cookie to cool completely so the chocolate hardens again, it could take up to one hour.
- I like to serve these cookies warm and melty.
- Cookies can be stored at room temperature for up to 5 days in an airtight container or you can freeze the cookie dough balls and bake a few at a time when needed.
- If the cookies are a day or two old, I like to heat them up in the microwave for about 12 seconds and serve warm!

Can you bake with Reese’s Cups?
I don’t recommend baking with Reese’s cups unless you are expecting the chocolate to melt completely or putting them in recipes for the flavor.
Using Reese’s cups to top my recipes (like this Peanut Butter Cup Cookie) so the Reese’s stays in tack but gets melty is the way to go!
