What you need for Reese’s Egg Easter Cookies
- Parchment Paper
- Cookie Scoops
- Cooling Rack
- Reese’s Peanut Butter Eggs
How to make Reese’s Egg Easter Cookies
Line a baking sheet with parchment paper and preheat the oven to 350 degrees.
In a small mixing bowl, combine the peanut butter, 1 cup of sugar, and egg together and mix well.
Use a 1 tablespoon cookie scoop and create cookie dough balls. Roll each cookie dough ball into the remaining sugar and shape into an oval before placing them about 2″ apart on the baking sheet.
Use a fork to create hashtag marks on the cookies – but don’t press down too hard, you still want the dough thick when it bakes.
Bake for 9 minutes and remove from the oven to cool about 3-4 minutes.
Top each cookie with a Reese’s egg and let the cookies cool completely or eat them while they are hot!

Yields: 22 Cookies
Preparation time: 10 minutes
Baking time: 9 minutes
Additional time: 10-45 minutes

1 cup peanut butter
1 1/4 cup granulated sugar, divided
1 egg
22 Reese’s Peanut Butter Eggs
Directions:
Pre-heat the oven to 350 degrees and line a baking sheet with parchment paper.
Combine the peanut butter, 1 cup of sugar, and egg together and mix well.

Place the cookie dough balls on the prepared baking sheet and shape the cookie dough ball into an oval shape (so it looks like an egg when it bakes).

Remove from the oven and let cool for 3-4 minutes before placing a Reese’s Egg on each one.

Notes
- You can eat the cookies immediately or you can let them cool completely until the chocolate re-hardens.
- Cookies can be stored at room temperature in an airtight container.
- Heat cookies in the microwave for 10 seconds before eating if they are not warm - trust me, this makes them so good!
What if my simple peanut butter cookies are falling apart?
If your cookies are falling apart you may have too much sugar or not enough peanut butter. When measuring the ingredients be sure they are accurate.
What kind of peanut butter do you use in this recipe?
I would use any peanut butter – i used Sam’s Natural Peanut Butter. But would stay away from natural peanut butters that have to be stirred. Any regular, smooth peanut butter will work.
