What you need for Peppermint Brownie Cookies

  • A box of dark chocolate brownie mix! If you don’t have dark chocolate you can use regular fudge brownies! 
  • Hershey Peppermint Kisses
  • Crushed Candy Canes or Peppermint! I crushed up the mini candy canes, but you can also buy peppermint sprinkles to make it super easy!

How to make Peppermint Brownie Bites

Ingredients for Peppermint Brownie Bites

First, get everything ready and preheat the oven to 375 degrees. Line a baking sheet (or two) with parchment paper so you’re ready to bake once the cookies are done! 

Brownie Mix for Peppermint Brownie Bites

Start by making the brownie mix cookie batter. You will want to use a medium sized mixing bowl and a fork for mixing. You can use a hand mixer if you want, but it’s not necessary.

Add the flour to the brownie mix and mix them together.

Stir in the eggs, melted butter, chocolate syrup, and vanilla. Mix until combined but do not over mix.

Fold in the chocolate chips and your cookie batter is done!

Next, use a one tablespoon cookie scoop to create cookie dough balls.

Roll each ball in the granulated sugar and place them about 1 1/2″ apart on the baking sheet.

The cookies can be pretty close because they won’t spread much.

Bake the cookies for 7 minutes and then remove them from the oven.

As soon as they are done baking, garnish with crushed peppermint.

Then, after the peppermint crunch is on top, place a peppermint kiss on each cookie!

Let the cookies cool on the baking sheet for 8-9 minutes before transferring to a cooling rack.

Keep in mind that your kisses will be a little soft from the heat from the cookies – you will want the kisses to fully set before stacking.

If you wait 3-4 minutes before adding your kisses they don’t get too soft (but this isn’t necessary either).

Ingredients:
1 box of dark chocolate brownie mix (I used Duncan Hines Dark Chocolate 18.2 ounce box)
1/4 cup all purpose flour
2 eggs
1/4 cup unsalted butter, melted
1 tablespoon chocolate syrup
1 teaspoon vanilla
1 cup mini chocolate chips
1/2 cup sugar
About 1 cup of crushed candy canes or peppermints
Hershey kisses

Directions:
Preheat the oven to 375 degrees and line two baking sheets with parchment paper.
In a mixing bowl, combine the brownie mix and flour together.
Once the flour is mixed, stir in the eggs, melted butter, chocolate syrup, and vanilla together until combined.
Add the chocolate chips and gently mix them into the batter.
Use a one tablespoon cookie scoop to create cookie dough balls.
Roll each cookie dough ball in the granulated sugar until fully coated on the outside.
Place the cookies on the prepared baking sheet (about 1 1/2” apart – they can be pretty close), and bake for 7 minutes

Let cool on the baking sheet for 8-9 minutes before transferring to a cooling rack.
