What you will need to make Lemon Crinkle Cookies!

  • A Lemon Cake Mix (I used Betty Crocker Delights Super Moist Lemon Cake Mix)
  • Butter and Eggs
  • Lemon Juice and Powdered Sugar (don’t skip these ingredients because these REALLY add to the flavor!)
  • Baking Sheet and Parchment Paper

How to make Lemon Crinkle Cookies with Cake Mix

Easy and Delicious Lemon Crinkle Cookies with Cake Mix! Perfect for Spring and Summer! Try these simple Lemon Cookies for any occasion! Yum!

To get started, preheat your oven to 350 degrees and line a baking sheet with parchment paper. Then add the lemon cake mix to a bowl. (I used the Betty Crocker Delights Super Moist Lemon Cake Mix)

Add in the other ingredients – butter, eggs, and lemon juice.

Now combine the ingredients together. Then use a cookie scoop to make cookie dough balls.

Drop each cookie dough into a bowl of powdered sugar. Roll the cookie dough ball around to completely coat it powdered sugar.

Place the cookie dough balls on the baking sheet. (You can also sprinkle some more powdered sugar on top before baking) Bake the cookies for 11 minutes.

Finally, allow the cookies to cool on the baking sheet for about 7 minutes before placing them on a cooling rack to finish cooling before serving!

Lemon Crinkle Cookies Ingredients

Lemon Crinkle Cookies with Cake Mix

Yields: 13 Cookies
Preparation time: 7 minutes
Baking time: 11 minutes
Additional time: 10 minutes

Ingredients:
1 box of lemon cake mix (15.25 ounces)
6 tablespoons unsalted butter, melted
2 eggs
2 tablespoons lemon juice
1/2 cup powdered sugar

Directions:
Prepare a baking sheet with parchment paper and preheat the oven to 350 degrees.
Combine cake mix, butter, eggs, and lemon juice together in a medium sized mixing bowl.
Once the batter is mixed well, use a two tablespoon cookie scoop to create the cookie dough balls.
Roll each ball in the powdered sugar and coat generously.
Place the cookie dough balls on the prepared baking sheet about 1 ½” apart.
Bake for 11 minutes.
Let the cookies cool for 7 minutes on the baking sheet before transferring to a cooling rack.

Notes:
● Option to sprinkle cookie dough balls with more powdered sugar once they are on the baking sheet.
● Do not sprinkle cookies AFTER they are baked because they lose their “crinkle” effect.
● Store in an airtight container at room temperature for 3-4 days.
● I used Betty Crocker Delights Super Moist Lemon Cake Mix, 15.25 oz.
● If you want to use a smaller cookie scoop, this recipe will yield more cookies.

How do you get crinkle top on cookies?

You get the crinkle effect by either rolling cookies in powdered sugars or granulated sugar. The sugar will help pull the moisture from the cookie and create the crinkle effect on top. Roll the cookies before baking, do not sprinkle extra after baking or you will lose the crinkle effect.

How do you know when Crinkle Cookies are done?

You’re looking for a crackly texture on the outside of these Lemon Crinkle Cookies. When they are finished baking, you can check that the outside is “set” by gently poke the edges. As the cookies cool, the edges will harden even more to create that perfect “crinkle” effect!

How long is the shelf life of Crinkle Cookies?

Lemon Crinkle Cookies will last up to 5 days at room temperature in an airtight container. You can also store them in the refrigerator to last a few more days!

These Lemon Cookies are also great if you want to make them ahead of time! Once they are baked and cooled completely, store them in an airtight container or bag and they will store them in the freezer for 2-3 months!
