What you need for Strawberry Cookies!

  • A box of Strawberry Cake Mix! You can use any cake mix, I used Betty Crocker.
  • Eggs, Canola Oil, and Vanilla! You can always leave the vanilla out, but I like the added flavor. 
  • Fresh Strawberries & Powdered Sugar for the glaze – just add water!

How to make this Strawberry Cookies Recipe with Strawberry Glaze

Strawberries are perfect for spring, summer, or any occasion! Here is how to make these Strawberry Cookies with Strawberry Glaze!

First, add the strawberry cake mix, oil, eggs, and vanilla into a bowl.

Next, mix all the ingredients together with a fork until combined.

Now, use a cookie scoop to make the cookie dough balls. Place them on a baking sheet and bake them for 10 minutes.

Once the cookies are baked, let them cool on the baking sheet for a few minutes.

Now it’s time to make the strawberry glaze! Blend the strawberries and water together then add in the powdered sugar.

Finally, spoon on the strawberry glaze onto the cookies. You can even sprinkle a little more powdered sugar on top for the finishing touch! YUM!

Strawberry Cookie Ingredients

Strawberry Cookies Recipe with Strawberry Glaze

Preparation time: 10 minutes
Baking time: 10 minutes
Additional time: 10 minutes

Strawberry Cookies Ingredients:
1 box of strawberry cake mix
2 eggs
1/4 cup canola oil
1 teaspoon vanilla extract

Strawberry Glaze Ingredients:
2 cups powdered/confectioners sugar
1/3 cup strawberries (chopped)
1 tablespoon water

Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a mixing bowl, combine cake mix, eggs, oil, and vanilla together with a fork.
Create 1 tablespoon cookie dough balls with a cookie scoop and place them about 2” apart on the baking sheet.
Bake for 10 minutes or until the edges start to brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before moving to a cooling rack.
Make the glaze by blending strawberries and water together in a food processor or blender (you can also just mash the strawberries if you prefer).
Add strawberry mixture to the powdered sugar and mix until smooth.
Once cookies are cooled, spoon glaze on top of cookies and sprinkle with powdered sugar.

What is Strawberry Glaze made of?

In this recipe I used fresh strawberries, powdered sugar, and water! You can always substitute the water for lemon juice to add a little extra flavor to your glaze. 

Blend the strawberries and water and then add the mixture to the powdered sugar – so easy! 

Here is another Strawberry Glaze Recipe that is slightly different but very similar. I love how this one uses a simple syrup for the base!

Can I add fresh strawberries to strawberry cookies? 

I would say yes! You could add 1/4 cup fresh strawberries to this recipe chopped to add an extra burst of strawberry to these cookies!
